Baked Tilapia - Budget Recipe



Baked  Tilapia -  Budget  Recipe

I hope you enjoy this baked tilapia  recipe.  Try it with other types of fish and it will be just as awesome. This fish  recipe is low in calories and just perfect  with a low side.  The side I made here in the picture is cuscus ,  I added just a  pinch of low salt  veggie stock to the water just to give it a nice flavor.

I know your Family and Friends will just love it.

Recipe....

1 to 1/2 Lbs. - Frozen tilapia  Frozen or fresh. 

3/4 Cups - Bread crumbs 
2 Tbsp. - Cooking oil
1 Tsp. - Oregano
1 Tsp. - Basil

Salt and pepper to taste. 

Options;
- Any other type of fish  
- Any other herbs
- Lemon juice topping

Frozen fish is the most economical budget minded fish that you can buy, because it can be stored for a long time and fresh fish has to be sold right away that's why it is at a low cost. Not that does not mean that you can not make this recipe with any other type of fish, go ahead be brave and just see what you can do to please your Family or friends.  






I like adding the seasoning to the fish in this way for it makes a lot less mess and you can easily wash the bag or toss it. Go ahead and shake and shake it will make you around if you add some music.. After all any exorcise is good.








Here at this stage I added a bit off cooking oil, but you can spray it with those oil spray cans or  just  rub butter to the dish, this is necessary to prevent the fish from sticking. 









If you want you can squeeze a bit of fresh lemon juice before that baking process or/and when it is baked.

Fish Curry - An Outstanding Dish



Fish Curry

This Is An Outstanding Dish If You Like Fish With Curry, Here All  Flavors  And Spices   Just Mingle Together   With  A Hint Of Heat.

I must say that I really like to make a lot of Indian dish’s with all it’s  full flavors of the spices and that awesome heat, just bring it on.  Of course when I ‘am  cooking  for my Friends and Family I try to keep the heat at a minimum but  then I add it to my plate to keep me and everyone happy.  
Now with a curry dish you really do not have to go through all the trouble of using so many types of spices. If you want, just pick-up a package of premix curry and  that will do it all for you.  With the mix you do not have to roast the spices,  just add it to water , coconut milk or yogurt and there it is, a perfect  Indian curry dish without all the fuss.  Try it with other meats and see how easy it can be.

Recipe....

1 1/2 lbs. - Tilapia or other fish

1 Tbsp. - Coriander
1 Tsp. - Turmeric
1/2 Tsp. - Chili powder
1/2 Tsp. - Cumin
1 Tsp. - Mustered 
2 to 3 - Bay leaves
4 Cloves - Garlic
1 Tbsp. - Tomato paste
1 to 2 Tbsp. - Lemon juice
1/2 to 2/3  Cup - Coconut milk

Salt and pepper to taste.

Options;
- Omit all spices and use the pr-mix curry powder
- Yogourt instead of coconut milk.  
- 1/3 Cup green onions
- 1/4 Cup parsley

When working with the raw spices make sure that you gently roast it on low heat while then mixed with your  garlic and bay leaves to give you a full aromatic flavour. 









Add green onions to the recipe if you like or add plain onions to the pot with the Garlic. Most of the time I use the white part of the green onion at the beginning then the green part at a later part of the simmering. Try your way and see what you like best. 








To make this dish even better and to make my life easier I slice up some wraps and just put them into the toaster and presto the perfect toasted roti bread. 








Try it our way and enjoy, but make extra for I know your Family and Friends will just love it. Don't forget some extra hot sauce on the side for the ones that like it extra hot.

This dish s absolutely awesome with its delicate pasta the seafood right down to a bit or hint of hot pepper spice. A great romantic dish for you and your loved one to enjoy…:)
Ok, Guy’s listen up, a Woman just loves a Man that can cook and if you want to impress, well this is the dish. Just practice it and then have her sit down in the Kitchen with you with some beautiful flowers. Open up a bottle of her favourite wine and pour out two glasses. As you glide gracefully at in the Kitchen and stir up your dish. With the smells and your cooking will make any Girl happy. Try it Guy’s you cannot go wrong with this dish. Also for the Ladies your Man will Love you for it, it is really a romantic dish. Awaaa !! all the loving, what could be better…

Recipe....

1 1/2 Lbs. -  Seafood assortment
3/4 Lb. - Pasta of choice

1 Sm. - Onion
3 Gloves - Garlic
2 Tbsp. - Butter
1 Tbsp. - Hot Sauce
1 Tbsp. - Tomato paste
1 Cup - Beer
1/2 Juice - Lemon
1/2 Tsp. - Thyme
1/2 Tsp. - Cumin
1/4 Cup - Parsley
1/3 to 1/2 Cup - Green onions

Salt and pepper to taste

Options;
1/2 Cup - White Wine

Keep the temperature on med./low to low so the sauce will simmer without overcooking, that will give you a very delicate smooth  taste. 











Try this recipe with just shrimp, calamari or mussels, this  sauce can be used for a vast variety of other seafood  types. Try it and see.

5 Min Tilapia Dish - YouTube "Wigs" Cooking Competition


5 Min Tilapia Dish

I made this awesome dish for the "Wig's YouTube Channel"  Cooking challenge where you have to create your favourite dish in 5 - mins. I came up with this fish dish that is steamed instead of fried that could of been a lot faster. Now I could of grilled it but I wanted to keep it as simple as possible from one pot to the plate. 

I used frozen veggies that do come in a great variety og choices and makes life a lot easier  then to chop all of them. 

This Dish is a low- fat recipe and just perfect for a weight lose plan or to just maintain it. Try it and see how good it is and have fun with the timer like I did..

1/2 Lbs. - Filet Tilapia or other
1 Cup - Frozen Veggies any type

Garnish with parsley

Sauce 
1 Tbsp. - Sour cream or buttermilk

1/2 Tsp. - Sugar
1/4 Tsp. - Salt
Lemon juice to taste
Pepper to taste.

Portuguese Style Fish Soup - Just Awesome.



Portuguese  Style Fish Soup

I brought you back this awesome Fish Soup from a Traditional  Portuguese recipe from my trip. With  all the taste  but none of the work. Normally it would be served  with a day old bread in the bowl and pour the soup, but it goes just great with potatoes or vegetables.

Now if you use fresh fish like the Traditional   way  then you will have to do some work. First remove all the scales and gut it. Separate the fish into parts, the head, tail, and the middle bone will all got into the pot with water and boiled until you get a fish broth in about  40 min's, then strain out the contents and use the broth for your soup stock. The rest of the body can be added to the soup hole, skinless or in pieces.    

Either way, it is just awesome.

Try it, you will love it..

Fish  - Can Hiring in tomato sauce. 
2 Lg. - Potatoes 
1 1/2 Med. - Onions.
1/3 Cup - Parsley 
2 Stocks - Green onions. 
1 Tsp. - Veggie stock 
1 1/2 to 2 Ltrs. - Water
1/2 Tsp. - Cumin
1 to 2 - Bay leave
4 to 6 Whole -  Allspice 
1/2 Tsp. - Sweet Pepper
1/3 Tsp. - Chile powder

Salt and pepper to taste. 


Options ; 
-  Day old bread in soup.
-  Other  vegetables. 
-  1 Tsp. vinegar. 
-  Fresh  fish, see above.

Salmon  Pasta In A Creamy Sauce

This recipe is out of this world, so creamy and taste, the cream cheese just gives it that smoothness and richness to eat.  Make a lot for your Family or love ones will ask for seconds.  

It is also a big hit with your guests for a home dinner or a party, it is always a great success. The only problem that I see with this recipe is that I always have to have some more at hand for it does go very quickly and I really do not want to run out.

Recipe;

1 to 2 Lbs. -  Salmon

1 Med. – Onion
1/2  Cup – Frozen peas.
3 to 5 Oz. -  Plain cream cheese
3 to 5 Oz. -  Sour cream or light cream
2 Tbsp. – Cooking oil
1 Tbsp. – Flour
1/2   - Lemon
1 – Bay leaf
1/2 Tsp. - Veggie stock 
3 to 5 – Whole allspice

Topping;
1/2  Cup -  Parsley

With is recipe, you really can use can, frozen or fresh salmon. Here I am using some fresh fish that I found on special at my local supermarket. 

Sometimes, you can also find some salmon end pieces that are not desirable for frying or baking, but would be perfect for this recipe. After all, you would get more bang for your buck with this savings. 








This is where the secret taste comes from. The slow boil with the fish and all the spices come together into a delightful taste when it is blended with the pasta. 










Make sure at this point that there is no bones in the fish. Here I discard the fish skins, but some like to leave them. It is really up to you.

Remember for this recipe you do not need a premium salmon cut for this to be awesome, you can go for the end pieces that would be at a very affordable price.  It would not make any different towards the presentation or taste. 







This is where the flavor is, so please do not toss this liquid out. If you find that there is some loose particles leftover from the simmering, then just strain it to remove them. 









Just cook it long enough for the ingredients to blend together and the sauce becomes thicker. Remember that the salmon is already pre-cooked at this stage and we do not want to overcook the fish. 

If you find that the sauce became too thick, then just add a little milk at a time until it becomes the way you want it.

Fish With Lemon Sauce - My Way - Low Fat - Healthy.



Fish With Lemon Sauce just has that great tangy taste that you are looking for. This recipe work good with fresh or frozen fish, either way, try it you will not regret it.  Also it's fat free and good for you, perfect for the family meal.

Recipe

2 -- 3  Fish fillets.
(Fresh or frozen)
½  - Green  sweet pepper.
½ -  Red sweet pepper.
1 to 2 tablespoons Parsley.
100 to 120g  - Baby mushrooms.


Lemon sauce
¾ cup -- Water.
1 -- sm. stock chicken/Veggie.
1 to 2 tablespoons - lemon.
1 to 2 tablespoons Parsley.
2 teaspoons corn flour.

Extra water and/or corn flour, if needed.

Herring Ceviche - Healthy - Low Fat.

Herring  Ceviche is just awesome and so Goooood for you, low-fat and  gives you brain food and everyone knows "we all need that".  Please read below how this dish came about.

Recipe

1 -  Lg 2 pieces  herring/sardine  (skin on).
1 -- Lemon juice.
1 -- Lime juice.
1 to 2 Gloves garlic.
1 -- Med. Tomato.
1 /4 Cup olive oil.
1 /4 Cup parsley.
1/4  Cup green onions.

Grilled  (skins off, optional) 
1 -- Green/red pepper.
1 /2 Zucchini.

Marinate
1 -- Hour Vegetables
1 -- Hour pre-marinated fish.
6 -- Hours raw fish. (min).

Ceviche,  How it came about. 

Ceviche is believed to have originated in Peru or Ecuador. In fact, it was the Inca and Pre-Inca times.

They  had Cities  all over the two Continents connecting them with trails called the "Inca trails"  and had long distance runners that carried the news to each place. Now all they had for food was dried yucca in a leather pouch  for the runners stable food as they ran.

Now when they did stop for another other meal in the Jungles, they found plenty of fish in the rivers and streams and with all the natural citrus trees around, it was easy to put two and two together.

A simply citrus bath with the fish was a great replacement for an open cooking fire for after all  they had no time to waste,  to keep  up the running pace for some City was expecting some "news".

1/2 Kilo  - Fresh or frozen fish.
Shrimp (option)
1/2  - Lemon
3/4 Cup - Milk
2 Tbsp. x 2 - Butter.

1/3 Cup - Parsley
Pepper to taste.
Salt  (option)


Topping
1/2 Kilo  - Potato's
2  Tbsp. - Butter
1/2 Cup - Sour cream or buttermilk

Salmon Potato Bake - Low Fat - Heathy -



Salmon Potato Bake, just an awesome recipe. Low in fat and very filling, try cooking the onions in water instead of  oil, it will be just as good......:)

Salmon is full of important nutrients, including omega-3 fatty acids, which our bodies need but can't manufacture.

1 1/2 Lbs. - Salmon or any fish
2 Lbs. - Potatoes
1 Tbsp. - Olive oil
1/4 Cup - Bread crumbs

Frozen fish works perfect with this........

1 -  Tbsp of sesame oil.
1  Lbs. -  Pd of any fish, cut into chunks.
2  Cloves -  Garlic.
1 - Inch of fresh ginger, chopped.
1/2  Can - Diced tomatoes.
1/2 or 1 -  Chicken or veggie  stock.
1/4  Cup -  Parsley. 
1 or 2 Tsp - Ground  Curry
1/2 Lime, Juiced
Salt and Pepper to Taste

1 -  Med.-  Zucchini , Chopped

Portuguese Style  Crab Croquettes. 

Crab Croquettes are just perfect for an appetizer of for a Party favourite.  Here I'am using imitation crab for the budget consensus, and of course you can use the real thing, anyway it's crunchy and awesome.

Try this recipe with  tuna or any other kind of fish, it all works well, one of my Portuguese dishes calls for cod its just mmm mmm Good.

Hope you will enjoy this Croquettes.

Recipe.... 

250 Grams - Crab, cod or Imitation crab.

1/2 Kilo - Potatoes
1/2 Cup - Onion
1/2 Cup - Parsley
2 - Eggs  ( 2 parts )
1 - Egg -  White
1 Tbsp. - Fish seasoning
2 Tbsp. - Tomato paste
2 Tbsp. - Cooking oil
1 to 2 Tbsp. - Pimento paste or Hot sauce

Salt and pepper to taste

Part - Egg ( 2 parts )
3/4 Cups - Corn flakes
Bread crumbs as needed

Portuguese Style Tuna Salad - No Mayo " Low Fat "



 Portuguese Style Tuna Salad -  No Mayo  " Low Fat ".


Awesome Tuna and Potato Salad, easy to make and can be a complete meal or as a side dish. When the Portuguese make this dish they use fresh tuna and infusion with the tastes of Portugal with olive oil and homemade pepper paste with hot crispy bread.

Made real fast and since there is no mayo, it's has a  lower  fat content, all natural and good for you.

Recipe..... 

50 to 75 Grams - Can Tuna of cooked fresh Tuna

2 Tbsp. - Cooking oil
1/2 Kilo - Potatoes
1/2 Cup - Carrots
1/2 Cup - Onions
1/4 Cup - Parsley
1 Tbsp. - Pimiento paste or hot sauce
1 Tbsp. - Tomato paste
2 Tbsp. - Olive oil
2 - Eggs

Salt and pepper to taste.

Pan fried Salmon, Simple and Fast.



Pan fried Salmon, Simple and Fast.

Here I'am just showing you the simply way on how to prepare and fry the salmon, it will be with  fast creamy topping that is out of this world.

I usually grill it in the oven after I fry the salmon skin down,  but my Friend Adam does not have a Grill oven. Adam this one is for you.

In this Video, I'am just showing you the simply way on how to prepare and fry the salmon. I hope that you try it this way and please let me know how it turned out for you.

Recipe ; 

300 Grams salmon
Salt and Pepper to taste.
2 to 3 Tablespoons Olive oil.


Salmon Sauce
1/3  Cup - Mayo or sour cream
2 Tsp. - Juice of a lemon
1 Tbsp. - Mustard, your favorite
1/2 Tsp. - Sugar
Pinch of salt.
Milk added to get it to the thickness you want.

Here I'am using a fish bone puller that you can get almost anywhere. Now if you can not find one then just use a small pliers. 

Make sure to run your fingers all along the meat side of your salmon and look for bones, believe  me if one is there you will find it. Do not trust the store to have done this for you and there is nothing worse then to find a bone when you are eating.



Place the salmon skin side down on  the hot pan and keep it there to cook without disturbing it until the skin becomes crisp and a bit darker in color.

When this happens you will also notice that halfway up the flesh part on the side that the color has changed. So when these things have happened then it is time to flip over the salmon.




Now that you have flipped the fish and you are not sure if it is cooked through, then just take  the thickest salmon portion on it's side and spread the flesh apart and take a look  inside taking care not to go to far in and split the fish.  The under cooked fish will have a translucent color and a spongy texture. If you see that it is dark inside and it flakes with a fork, well its done.

Also remember that the salmon will still continue to cook for a couple of minute by itself because of the heat in it and  you could overcook the fish.
