Broccoli Apple Salad  -  Under 300 Calories

This broccoli salad is so easy to make and do not let the raw recipe fool you, for the combined taste of the fresh veggies with a very smooth cream sauce blended with the sweet cranberries is out of this world. 

This can be served with Dinner or Lunch, but be rest assured that it can go on the side of any dish. Try making a lot and use it for a party or get-together, they will love you for it. 

When I made this dish, the only problem I had was that it disappeared real fast and "puff" it was gone, so please make some extra. This will also hold in the fridge for a day or so and it will still be fresh and awesome.

Recipe; 

2 Cups - Broccoli Florets (flower)  2 small heads.

1/4 cup              -  Red onion
1/4 to 1/2 cup    -  Carrot
1 lg.                   -  Red apple
1/4 cup               -  Fresh parsley
1/4 cup               -  Dried sweet cranberries
1/3 cup               -  Low-fat Yogurt
1/4 cup               -  Low-fat Mayo
2 tablespoon       -  Lemon juice
1/2 teaspoon        - Sugar

Salt and pepper to taste.


Options;
1/4 cup       - Raisins
Add 1/4      - Walnuts

What could be better than fresh veggies mixed with a smooth velvet sauce that just blends in perfectly with a touch of sweetness of dried cranberry.







Neat trick, just use your peeler to cut smooth perfect slices of the carrot. In this way, it will actually taste better, it will always be tender and sweet.







The size of the broccoli flower should be "bite-size", but that will depend on you on how big or small you want it. 

Remember to save the stock and bits to make homemade veggie stock. I usually store all the leftover veggies parts in a plastic bag in the freezer.







Here I am using dried cranberries, but you can really use whatever your heart desires. Sometimes times if  I am in the mood, I add some raisins or walnuts or both.

Go ahead and make it your way.

My Weight Loss Story.



My Weight Loss  Story


At One Point In Life

At one point a few years ago I realized that something had to be done with my weight, I was 235 lbs. (106.5 Kg). It even got that I had a problem tying up my own shoelaces for my stomach was enlarged. 

Just like a lot of others, I tried many diet systems, bought a lot of books, joined a fitness Club, but continued to struggle with my weight. 

After I started to have breathing problems and finding that I was getting sick more often, I got a reality check. So I went to see my Doctor and was told that I would not last long if I continued with my present lifestyle. 


I needed to change everything if I wanted a decent life and a future.

Well,  I knew that I had to get something going soon, very soon. So I started to forget all things about all the diet systems that I tried before and failed.

I grabbed my notebook, measuring tools, pots, and pans, and of course "Mr. Google" and started to create a food system that was made custom for my body and that could help me lose weight and control it.

Magic Diet Soup was born after about a few tries with the soup.  I  finally got it just right. " Magic Diet Soup "

I started to just eat the Soup for about a week and then "wow" !!, I lost weight, but I knew that most of it was only water at first, so I tried to stay cool about the results.  After the first week, I lost about  8 pounds and was happy and I had to say that I did feel better because of all that fiber going through my system, it did give me a better feeling of well being.


Keep On Going, No Choice Do Or Die. 

Now that I did this for a week and finished "now what", where do I go from here. So it was back to the Kitchen to drum some other foods to keep up my diet plan. What I came up with was my "In Between Soups"  Magic Diet Soup # 3, The In-Between Soup that  I would eat usually for Lunch every day, but what about some protein and more of a solid type food, for with just soup, I knew that I would not last long on this diet and I could make myself sick.

Well. then I started to change the way I ate and added meat protein in small portions into my Diet and concentrated on having this for my Lunch and now switching the soups for the evening meal,  for in this way I found it worked better for me and my system. As for breakfast, I had eggs but no more the 3 times a week with a light salad, also during the week I also had high fiber cereals with skim milk and a lot of oatmeal.  

Now I know "what happens when I get hungry?   "In between meals",   well  I ate more fruit and plenty of raw vegetables like carrots, tomatoes, celery, etc., I found this worked for me and the weight was coming off and this time it was not water but the fat leaving my body.

I got to a point that the weight was coming off, but again I knew that I needed some type of exercise in order to further remove the weight and get me in better shape. Now I am really lazy about it and all things associated with exercising, I dreaded getting started. 

So I finally decide to start to run, why?, because I was lazy and this had to be the simplest form of doing it. 

 Right?  Wrong !!   


When I started to run for the first time, I could not even do 100 yds, I was out of breath, had a burning pain in my lungs and my legs were giving up on me. So my first attempt sent me into a slight depression, for how was I going to do this?  Now I knew that I had to try and if others can run hundreds of miles, then I should be able to run at least 1/2 of one. I would do it if I had to kill myself trying, for it was either getting it done or go back the way I was and that would surely kill me.

So I started, really slow at first by walking and jogging for about a month slowly adding more and more distance in yds. until I could do my first month's program until I could do it with ease. Here is my first running program that I designed for my training for the first month of running.  Running Program One     

After the second month, I noticed that the weight was just flying off and "boy !!' was I excited, I just wanted more. So in the following month, I created my second  Running program #2, please check it here for my second month.  Running Program Two

14.01 Km. Run

One of my usual runs along the river, life is good for me now. Now, this shows here that I did a 14.01 Kms. (8.6 miles) run, but remember, was this not the same person that could not even do 100 yds in the beginning.




Today 

Now today I run up to 2 to 3 times a week and enjoy it, I run like I feel like I have wings on my back. My weight is completely under control and maintained where I want it. I have super energy, I sleep like a baby, almost never get tired, hardly get sick, my Girlfriend never complains (wink), and  "yes" I can tie my shoelaces with ease now. I just feel great and my Doctor says that I'm a picture of health inside and out.

I have to say the  Soups and my running programs help me get to where I am today. In the above "After" above picture, I finally went down to 160 lbs. (72.5 kg.), but as for today I lost a bit more where I maintain it now and  I'm very happy at  152 lbs. ( 68.9 kg.).  with a 30 inch  (76.2 cm.) coming from a 44 inch  (111.76 cm. ) waist.

It was not easy and I did go up and down, but by going one step ahead forward and making this not a diet for your life, but a Lifestyle is the only way for you to get there. Remember there is no Magic here but there is very strong magic in oneself when you really want something and go out and do it.

Get Motivation  From   1,  2  and   Start. 

Looking for that dream job or trying out a new Diet Plan, well-being motivated can make a great difference between winning or losing. It does not matter whether it is a Business or your personal Life, it’s how your inner motivation thinking  propels   you for succeed or failure. 
Motivation combined with the right attitude often requires some practice until it becomes automatic in your daily life.  Now once you have mastered the power of motivation, it will send you into untiring energy and a feeling of acceleration to accomplish anything you want in Life.  



Where Can I find My Motivation?


Well  just look  around you, the  world  is just  filled  with successful  People.  Start   by  observing them and soon you will catch on, on what powers them to succeed. 

- Draw motivation from the successful  people or so called  world Motivators and also the ones that  haven't achieved much and you will reach your goals with both types of people. 


- Motivators are people that are enjoying a great amount of success in their lives, giving you a concrete vision of where you would like to be at. 

- Now those that haven’t achieved much can also serve you as a reminder, of what you do not want in life. As a thought ask yourself “ do they” have what you want, do they live the life that you’re looking for. If the answer is no, then get motivated and get started on the right path to seek “what you want in order to not get into their position.


Stay Focused On Your Vision.

In order to achieve  your vision it’s important to stay focused  on your goals in the present, the near and far future.  Focus on the positive things that will give you the right outcome and  the motivation that you desire. 

- To reach your goals keep reminding yourself “why” are you doing this. keep going forward towards your success and keep doing everything positive that takes you towards your goals. It’s just like climbing a high mountain, “keep looking up and do not look down”. 

- By remembering your “why”, it will give you the focus that you will need to drive forward to be motivated as your vision comes into your life . As you master more of these “goals” then the energy will come automatically and will be a natural part of your life and there will be nothing stopping you.

- Stay centered on the reasons “why” you are doing this. It’s important to set up your goals “of what you want” with the outcome. If you do not have a reason to get up, do something to propel yourself forward, find one to get you going. Ask yourself, what do I want, how can I get there and what is the path to archive it. The path may not always be clear, but just keep on moving forward and it will become clear.


 Believe In Yourself.

It’s important to believe in yourself, I know,  it’s hard, when you are tired and  sometimes you find yourself down and in the dumps. Now feeling down or feeling fine is really only a state of mind. The world is full of negative, news, TV etc. , it seems that it is only what the mass’s want to hear, negativity feeds the hungry.  We need to surround ourselves with as much positive things as possible, only in this way can we shield our thoughts from  things that will bring us down.   

- Stay positive in your thoughts, have confidence in your yourself and your abilities, remember that we are all different, but each one has a special talent and will always excel in it, if they just stay positive and believe in themselves.

- Staying positive can really be a life challenge, but by keeping up and pushing forward you will be able to have it work for you on a automatic basis. It is important in the beginning to learn “how” to program your sub-couscous mind so it will work for you without you always being aware of what you are doing. One example of the sub-mind is when you are walking, you do not say , right foot move forward then left foot move forward, no you do not, for your body has programmed your sub-mind to act automatically to have you walk.

Another example is, how many times have you walked a few blocks and then looked back and you did not remember walking down the street, stopping for the lights, crossing the streets or things that you have passed. It’s you sub-mind that takes over your body and guilds you to where you are going without you even being aware of what you are doing. So we can program our sub-mind to accept only positive things and reject out the negative , all automatically. 

- What do Achievers have different than you, they have the same mortal body, they have feelings, they feel pain and they are not indestructible, they are just like you and everyone else. The only thing different is the way they “think”, they have controlled their thinking process and programmed it for success. They have built up their thought process to “believe in “themselves” and programmed their sub-mind to act on automatic. 


Keep  Repeating. 

Just keep saying to yourself, that “If they could do it, so can I”.  So start to take the steps toward your Goals, remember practice makes perfect.  Do not give up, do not look back, chest up, and move forward and everything will come into place.

1 -  A fast weight loss
By doing a regular jogging program for at least 2 to three times, a week combined with a diet eating program will give you the fastest weight reduction. Let’s say that you are around the 65 to 75 Kg. range and when you start, you feel that you are just wobbling around, out of breath when jogging, but you managed to get to finish a Kilometer.  Well then, that would be about 300 or so calories that you have lost per kilometer, even if you think that you did not accomplish much.  In fact, in a Month with two jogs a week would  give you an approximately 2,400 calories gone.  Now that is a weight lost with just a minimum of an exercise plan.

2 - Reduce the risk of a heart attack
Jogging is an aerobic exercise and thus helps and improves your body’s ability to deliver oxygen to your muscles. Very simply, the more you exercise the better you heart works and reduces the factors of a heart attack. Also, every part of you becomes more efficient in the blood flow of your cardiovascular system, blood pressure control, more  energy and give you an all round feeling of well being.

3 - Increase of good HDL cholesterol

HDL cholesterol works like a cleaner picking up bad LDL cholesterol from your blood and removes it to your liver to be excreted from your body. Excess Ldl can be dangerous to your cardiovascular system by causing built-up and blocks or can restrict blood flow to your heart and can cause a heart attack. HDL cholesterol can be boosted   By improving your fitness levels by just a few workout a week.

When you put your bones under stress like jogging it cause’s a weight-bearing reaction on your bone system,  so, in turn,  your body response’s  back by increasing your bone mineral density that makes your bones much more strong and resilient.  This makes them  less likely to break and reduces the chances of getting osteoporosis.

A less active lifestyle is one of the risk factors for type-2 diabetes, as is the overweight person.  By jogging on a regular basis can help with both of these problems.

Your immunity system fights off bacteria and viruses from your body and the stronger it is the better it will work. Regular exercise helps stimulate the production of cells that fight off any ailments in your system. Also having a stronger system will also help prevent more serious illnesses   that are more life threatening from starting.

Can I Eat Fattening Food Or Fast Food In Order To Lose Weight?

Everyone is wondering “why” on my Cooking Channels and Blog that I show how I lost 35 Kilos by eating my Diets soups that I called my “Magic Soup Diet” series, then cook some really fatty foods that are not geared to a healthy Lifestyle.

It is a well know “fact” that eating fatty and fast food, makes individuals have higher weight gains, so you may be wondering how eating other high calories foods can actually help and keep you on losing weight and maintaining it. Since I have lost the weight, I have allowed myself to indulge in having a “one Meal” of my choice once a week. All in all, I can have anything I want, provided that it is only one meal of choice and in only one sitting.

It is so hard to be on a diet day after day while you eat soup and low GI foods is a really limited choice of things to eat can drive you to "getting off your diet or make you give up". So I found out for me, by eating anything I want once-a-week actually helps me to lose weight, how? by helping me control my urges of certain foods. For example, I love fried chicken, now who doesn't  now am I expected to never eat a piece of fried chicken leg again, there is no way I can do this, being on a diet or not.   Being on a strict diet all week long is boring and no matter how much I try, I cannot control my cravings for other foods, so  I allow myself a “one meal” of anything I want once a week. That glorious day, I look forward to it and plan what I want to have, like my favourites chicken wings with all the fattening spice sauces. I have to say that it is absolutely heavenly when I get to eat what I want,  with this it controls my  cravings,  keeps it under control  and helps me get back on track.  Of course, in about a few days I will again want to eat something fattening, but I know I will again have that meal that I so crave much, I know it sounds like a yo-yo effect, but it works.   

Now it’s important to realize and understand that a diet is just that a “diet” and you have to control what you consume. By eating everything you want is just not going to do it for you, but understanding that being too strict on yourself will increase the chances of you getting off your diet   or just giving up. It is better to give in a little  than to lose all.

Myself, I choose what I want to have on my “once a meal” per week,  I always plan when I can have it, usually during Mid-day  in order to still be able to move around and help digest it, let’s say that I ate it at night, then it would grind in me as I sleep, so keep the time in mind. Also, I have it all in one sitting, I can eat all I want to remove the  food cravings from my system. Knowing and expecting, that the next fatty meal is in a few  days, actually  makes it easier  to be on my diet.  Charged with the fact that  I will be on track  eating  healthy foods  again, and this makes  me  a lot stronger.  It makes  my life easier to stay in line with my foods and will increase my will power to stay strong and true to my Diet.


As I continued on this eating course, I found out that as time went by my cravings were less and less. For I found that my Body was actually, slowly rejecting the fatty foods, as I started to eat less and less of my once per week choices.  I can say without a second thought that I believe that when you customize  your body to eating right with only healthy food, that it actually lets you know that it does not like what you’re eating, by giving you signs of an upset feeling, or/and  a bit of an upset stomach. With this I found that I still enjoy my once a week serving of my so called “Junk Food”, but in lesser and lesser portions. As a result, of this I have divided my once a week into a twice per week on anything I want to eat for since my portions are now a lot smaller, I can have it more often, but no more than twice and not to go off this lifestyle that I have trained my Body to accept. Just the knowledge that you can have a fast food “treat” at the end of the week may be enough to motivate you to eat according to plan.


It has now been about a year since I lost my weight and I ‘am happy to say that I still am maintaining my weight and  have actually had to punch two more holes in my belt because  my belly is still contracting, and with time most of the old drooping skin will disappear.  I can say that by eating my “once-a-week” meal and a moderate exercise program has helped me stay on my diet and has worked wonders for me.
