Caribbean Salad With Mango And Avocado In A Light Dressing  Recipe

This salad is just perfect if you want to eat well and control your weight but you do not want to give up flavor.  I find this dish very refreshing and it has the perfect blend of veggies that fit in well with the sauce and spices. I was supposed to use mayo, but I decided to keep the calories on the low side, so I used yogurt. 

This is perfect for lunch or to take to work. Let me know how yours turned out. 


Ingredients

1/2 to 1 cup     -  Crab-sticks, stripped 
1 cup                 -  Cucumber, sliced very thin
1 lg.                   -  Mango, chopped 
2/3 cup             -  Plain yogurt 
1 -2 tbsp.          -  Soya sauce 
2 tbsp.              -  White wine vinegar
1 tsp.                -  Hot sauce (option)

Toppings 
1/2 med.         -  Avocado, sliced 
1/2 each         -  Juice of a lime 
1/4 cup           -  Green onions, chopped

As needed       - Chopped parsley, toasted  sesame seeds, lime slices

Note:  I added no salt because this dish has a lot of flavors, but you can if you wish.

Here we go again with a pasta dish or can we call it a salad dish. Whatever you want to call it, you know it will be an excellent recipe. 
Here, I did not slice the sausage, for instead, I break it down into pieces so it can blend better into the sauce and the pasta.



Ingredients 1 1/2 lbs - Italian sausage, skin removed 2 tbsp. - Olive oil 1 tbsp. - Oregano dried 1 tbsp. - Garlic, mashed 1/2 cup - White wine 1/2 cup - Red onion, finely chopped 1 cup - Green peas 1 cup - Cherry tomatoes 1 1/2 cup - Mushrooms, sliced 3/4 cup - Heavy cream 1/2 cup - Parmesan cheese, grated Milk as needed Salt and pepper as needed For more information, please see the video below;

Here, once again is a great lunch or picnic salad. I enjoy making these recipes because after all, I have to eat my work, so I like to take my dishes to my office for a great snack or lunch. 



Ingredients 

Dressing 
1/4 cup         -  White wine or apple cider vinegar 
1/4 cup         -  Olive oil
1 tbsp.           -   Dijon mustard 
1 tbsp.           -  Garlic, minced
1 tsp.             -  Honey, (natural)

Salt and pepper to taste 

Salad 
1 cup            -  Red kidney beans 
1 cup            -  Green beans (cooked)
1/2 cup        -  Black beans 
1/2 cup        -  Chickpeas
1/3 cup        -  Finely chopped red onions
1/4 cup        -  Green onions
1/4 cup        -  Parsley, chopped

Note
-  Rinse and drain all canned beans.

Want a perfect picnic salad, here it is. Easy to make and can be served anytime or anywhere. Perfect for the office lunch or even a snack. 


Ingredients


Vinaigrette Dressing 

3 tbsp.           -   Dijon mustard 

1/4 cup         -  Apple cider vinegar

1/4 cup         -  Rice vinegar

1 tsp.             -  White sugar 

3/4 tsp.         -  Salt, kosher 

1/2 tsp.         -  Cayenne pepper (option)

1/2 cup         -  Olive oil, added in parts.

2 tsp.             -  Fresh dill, chopped 

2 tsp.             -  Fresh parsley 

1 tsp.             -  Chives, chopped

1 tsp.             -  Fresh basil


Salad 

1/2 pkg.         -  Corkscrew pasta

1 cup              -  Snow peas

1 cup              -  Finely sliced carrots

1 cup              -  Broccoli florets, bite-size pieces

1 cup              -  Cherry tomatoes, sliced 

1/4 cup          -  Finely chopped red onions

2 cups.             -   Broccoli, bite-sized pieces 
1/2 cup            -   cherry tomatoes, sliced 
2-3 tbsp.          -   Olive oil
2 tbsp.              -   Garlic, minced
1/2 cup            -   Sun-dried tomatoes
1/4 cup            -   Parsley, chopped 
1 -2 tbsp.         -   Parmesan cheese, grated
1/4 cup            -   Black or green olives, sliced

Salt and pepper to taste

I love this salad and I cannot get enough of it. It's the perfect lunch to take to work, it's is so Diversified for your immediate family or for a party. It can be used as a side dish or a main meal or even a topping for tortillas.


The serving of 1 cup is around 165 calories and 7 grams of fat. 


Ingredients 

1 can                -  Black beans, rinsed and drained
1/2 cup            -  Corn, rinsed and drained 
3/4 cup            -  Cherry tomatoes, sliced
1 med.             -  Avocado, chopped 
1 sm.                -  Red onion, finely chopped 
1/4 cup            -  Green onion, chopped
1/4 cup            -  Parsley, chopped
 

Dressing

1 tbsp.             -  Apply cider vinegar
1 tbsp.             -  Olive oil

Going to have that party or get together and do not know what to serve. Well here it is, serve it as a main dish or a side dish, any way you do it, it will always be a great hit. The only problem you will have is that it will go very fast, so keep that oven hot and ready for the second and third batch.


Ingredients 1 1/2 Potatoes - Peeled or skin on cut into wedges 1 to 2 tbsp. - Olive oil 1 tsp. - Garlic oil 1 to 2 tsp. - Onion flakes 1 tbsp. - Sweet paprika Salt and pepper to taste

This Nacho recipe is one of my winners and the most wanted foods that my Friends want when they come to my home to watch a film or some game on Tv. Now the old "popcorn" thing will not do it anymore. Try this basic classic recipe and let me know how yours turned out.
Ingredients 1 pkg. - Unsalted or salted nachos, tortilla, and corn chips 2 lbs. - Lean or medium ground beef 1 med. - Onion, chopped 2 to 3 tbsp. - Taco sauce mix, (see below) 1/4 cup - Ketchup or 1 tbsp. tomato paste. 3/4 cup - Canned black beans rinsed and drained Salt and pepper to taste. When I am looking to lose weight especially after doing the Magic diet program, I am very concerned about putting on the weight back. This salad not only is high in nutrition but also high in fiber, something that your body needs to help you manage your weight. The combination of this dish is outstanding and delicious. Also, you can have an extra portion if you wish, for it will be ok, I promise you. Do not worry about the oil for as per portion, there is very little that will keep worried. Remember that a bit of oil is good for you in the uncooked staged to provide you with that extra energy that you need. This Tuscan recipe is so easy and fast that I was thinking that it was too simple for a video. Everything is so fresh and the taste from the olive oil blended with the veggies just makes it perfect with the marinated bread. It brings home a little bit of Italian cuisine for your family and friends. 

I made the Tuscany salad with a hearty rye bread that still holds its texture as it absorbs the liquid, thus giving it a great taste. 

I hope that you enjoy this and give it a try, also please let me know if you made any changes to it.

Recipe; 

3 thick slices of any hearty bread.

2 med.         -  Tomatoes
1/2 lg.          -  Cucumber
1/2 med       -  Lime juice
2 tbsp.         -  Olive oil
1/2 tbsp.      -  Sugar
1/2 med.      -  Onion
1/3 cup         - Capers
1/2 cup         -  Fresh parsley 
1/4 cup         -  Green or black olives
1 tbsp.          -  Vinegar


Salt and pepper to taste.

Here I'm using a hearty thick country rye bread that has a texture that can absorb the liquids and still not give you a soggy bread but a smooth marinated taste. 

Try it with day-old bread or really any type you want, just remember to toast it or put it under the oven grill until golden brown.




The cucumber is just perfect for this recipe, the mild fresh taste just goes perfect with the other veggies and the marinated oil. Go ahead and try it your way, let us know how you made yours. 





Slice the tomatoes in wedges so it becomes nice bite-size pieces, but try it your way and see what pleases you best. After all, it's your salad. See what you can come up to with this recipe. 







By not cutting up the parsley you will get a more of a fresh taste in every bite and it will make it more of all-round natural taste. I would advise using only fresh parsley or really any other kind of fresh herbs. 






Finish it off with lime or lemon, whatever you use it will complete this recipe your way. In this way, you will keep repeating this dish for your light meals or a side dish.

Broccoli Apple Salad  -  Under 300 Calories

This broccoli salad is so easy to make and do not let the raw recipe fool you, for the combined taste of the fresh veggies with a very smooth cream sauce blended with the sweet cranberries is out of this world. 

This can be served with Dinner or Lunch, but be rest assured that it can go on the side of any dish. Try making a lot and use it for a party or get-together, they will love you for it. 

When I made this dish, the only problem I had was that it disappeared real fast and "puff" it was gone, so please make some extra. This will also hold in the fridge for a day or so and it will still be fresh and awesome.

2 Cups - Broccoli Florets (flower)  2 small heads.

1/4 cup              -  Red onion
1/4 to 1/2 cup    -  Carrot
1 lg.                   -  Red apple

1/3 cup               -  Low-fat Yogurt
1/4 cup               -  Low-fat Mayo
2 tablespoon       -  Lemon juice
1/2 teaspoon        - Sugar

1/4 cup       - Raisins
Add 1/4      - Walnuts

What could be better than fresh veggies mixed with a smooth velvet sauce that just blends in perfectly with a touch of sweetness of dried cranberry.







Neat trick, just use your peeler to cut smooth perfect slices of the carrot. In this way, it will actually taste better, it will always be tender and sweet.







The size of the broccoli flower should be "bite-size", but that will depend on you on how big or small you want it. 

Remember to save the stock and bits to make homemade veggie stock. I usually store all the leftover veggies parts in a plastic bag in the freezer.







Here I am using dried cranberries, but you can really use whatever your heart desires. Sometimes times if  I am in the mood, I add some raisins or walnuts or both.

Go ahead and make it your way.

Is your belly protruding out just a little and you cannot understand why? Well, mostly it could be a system that has some gas built up or "yes" a bit of backlog. Either way, this salad clean and bring up your system right up to par and reduce your belly.  

Well here go again with an awesome salad that is just what we need from time to time. This salad may not look like it has much but do not let it fool you. This salad comes with a punch when it comes to giving you a lift when you need it and will give you a cleansing feeling in your body, as it starts to work.

It has just the right combination of nutrients, vitamins, and roughage to get the job done in one meal.  Immediately you should feel and get a pick-me-up feeling of well being in a short while for this salad has that effect on people.

Do not think that this salad was taken from the internet, yes there is some like this but and yes a big "but", there is a difference with it.  I have actually experimented with this salad with many different ingredients over and over again tell it was perfect. I used my Girlfriend, myself, and friends to try it as a meal and report back to me. The result was awesome on taste and they all said that they found themselves full of energy and all got a great feeling of calm in their body after eating it.

1 Med.         -   Head Broccoli

1/2               -   Leek
1 lg.             -   Carrot
1/2 cup        -   Corn
1/4 cup        -   Parsley
1/2  tsp.       -   Sugar

1 tsp.           -   Sweet paprika powder
1/4 cup        -   Vinegar
1 tbsp.         -   Olive oil
1/2 med.      -  Juice of a lemon

Salt and pepper to taste. 


Options 

3 tbsp. - Mayo low-fat
3 tbsp. - Sour cream
Sunflower seeds as needed 
Iceberg lettuce  as needed 



Toppings

Sunflower seeds and/or raisins as needed
Fresh mint leaves


Makes two serving under 300 Calories each serving. 

Use as much as necessary.

Add all the carrots first to the food processor for because of being harder it will not over chop the broccoli if there were together. 

When the carrots are not cooked and are raw will be low on the GI scale so have as much as you want without the worry. 






I would add the broccoli here in two parts because adding to much will over chop it on the bottom of the processor and have big chunks of it on top and it could turn out not even. 

I used only the pulse setting in order to have more control of the chopping process.








Add as much as you want of the lemon for this juice pulls all the flavor together and helps digest the broccoli in your system .

If you do add more it will not hurt the salad but it could make it to acidity for some. So taste it as you add a little at a time to be on the safe side. 








Now here comes the mayo and I had to add this because it really makes this dish a nice creamy sauce, but if you are counting calories then just reduce the amount or admit it all together. By not adding it, it will not affect the detoxing factor of the salad. It is just for a more rich taste that is added to this. 







Go ahead and add all the fresh parsley that your heart fancy for it can never have enough for you know it's nature's perfect food and it does wonders for you.

Well,  thank you, everyone, that supported my cabbage diet soup series, it was and is a great success and it helped many people to remove the weight.

But, man can not live on soup alone on soup, we will need some type of hard food with protein of sort. It has to be something that can help you keep those pounds off, something tastes good, is nutritious and low in calories. 

So here is the starting point of my new series of "Dishes Under 300 Calories". I hope everyone will follow this new low-calory diet. 

Now with this dish, we start with tuna and other things that will make this dish great-tasting and low-calorie. I hope you will enjoy this tuna salad and I am wishing everyone great health.

Recipe;

1 can             -   Chunky tuna in water

1 med.           -   Avocado 
1 med.           -   Red onion 
1 med.           -   Cucumber 
1/2 cup          -   Green onions 
1 sm.             -    Hot pepper 
2 tbsp.           -    Lemon juice 

Salt and pepper as needed. 


Garnishes 

Lemon or lime slices 
Fresh parsley 
Fresh dill   



Calories per serving -   230 calories,  1/2  of the recipe above.

Start with your favorite canned tuna and if this is a diet recipe for you then the tuna should be in water not in oil. The combination here is just perfect to help you hold your weigh and fill you up so you will not feel hungry very soon after eating. 




After removing the skin and core, slice it as thin or as thick as you want it. The avocado is this meal has  a nice round taste to add to this dish and it blends perfectly with the other ingredients.  




In this salad I like to use red onion, I know it is really more acidity and stronger than the average white onion but its higher sweet flavor makes this perfect for this dish. Also, it gives off some color and makes it more appetizing. 





When it comes to hot peppers that's your choice but remember that the hotness from these peppers make your metabolism go higher and that burns fat and your lose more weight. Now as for the inside seeds, well that's up to you. As for me, I like to add them to my soups but not to a salad for I do not want anything crunching in my salad.




Go ahead and finish it the way you want. Add lemon or lime slices, some fresh parsley, or fresh dill. After all, this is your dish and you should make it your way.

I have to say that this pasta dish is one of my favorites. When it comes to avocado, with smoothes in the cream, it all blends well for the taste buds. 

Do not think that this pasta recipe is hard to make, in fact, it is really fast and easy, try it and see.  Try it with your favorite pasta and see how it transformed into something that will be sure to please your Family and Friends.

Recipe;


2  Avocados

1/2 Box/package - Penne pasta

3/4 Cup - Buttermilk
1 Cup -  Low-fat feta cheese
1 Tsp. - Garlic powder
1/2  juice - Lime

Toppings
1/3 Cup - Green onions
1/3 Cup - Parsley
200g / 8 oz.  - Colored cheery tomatoes.


Salt and pepper to taste.

Just look how only good things go into this recipe, this is what makes it awesome. Try it with different cheeses and see how many flavors you can come up with. 









This is what makes this dish so easy, just add to the blender and then mix.

What could be easier and faster?








When the avocado mixture gets to be thick and creamy, then you know it is done.  







Make sure that the pasta is hot when you add the mixture from the blender.

If you find that the sauce is too thick then use some of the pasta water. Just add a little at a time, because if it is too runny it will not stick to your pasta. 





When everything is blended, then add your toppings. Give it a few minutes on low heat to warm up the tomatoes.
