This Recipe Is A Must Try For Taste And Will Keep Your Diet “Under Control”.

What could be better than a super-fast meal like this one that has all the nutrition and veggie’s that you would need in a Diet meal plan. That’s why I call this the Magic Diet because I know that it works. 


This recipe is just outstanding for keeping the weight off and helping you keep fit. The added chicken breast works out perfectly to give you that extra protein that your system needs to carry you out through the day.

Recipe;

Any type of crispy bread

1/2 Lbs. - Chicken breast

1/2 Cup - Feta
1/4 Cup - Basil
1 Tbsp. - Lemon rind
1/4 Cup - Parsley
1/4 Cup - Green onions
1 Tbsp.  - Olive oil
1/2 Lemon - Juice

Salt and pepper to taste.

Bread topping;
1 Tbsp. - Olive oil
1/2 to 1 Clove - Garlic

Options;
1/2 Cucumber
1/2 Cup - Sweet pepper

Use any type of cheese that you like and favor, but I would try to stay to a type that would crumble in your fingers like the one I'm using, Feta.
Remember to use low-fat cheese to keep this meal in a weight loss plan. 









Use any type of bread you would like, but please make sure that it is the crispy crust ones like  French Bread.

Chicken To Die For  -  Budget Recipe


This recipe “Chicken To Die For”   is one of my favorites because it is made so  fast and it’s really easy,  no one can make a mistake here.  Not only does it have an awesome taste but if you use a skinless breast  then it is becomes a  low-fat dish that’s perfect  to keep your waistline under control.

Now what could you ask for in a dish like this, so simple and tastes out of this world.

 Recipe...

2 - Chicken skinless breasts.

1/2 Cup - Plain yogourt
2 Tbsp. - Parmesan dry cheese
1 to 2 Tbsp. - Seasoning salt or Chicken seasoning

Homemade seasoning salt
1/2 Tsp. - Cornstarch
1/2 Tsp. - Turmeric
1/2 Tsp. - Paprika
1/2 Tsp. - Garlic salt
1/4 Tsp. - Pepper
1 Tsp. - Sugar

Here I' am using skinless chicken breasts to keep it low fat. If you want you can leave the skin on, but you should  fry the skin part down and then add the mixture to the top and  then to the oven. Really you could use any part of the chicken, experiment and see for I have done this and it turned out great.








By using Seasoning Salt or Chicken Seasoning you really cut the downtime  time in half and sometimes it does help you in the Kitchen when you are a bit tired. For me I like about everything homemade, so please check the recipe above for the homemade version. 



Don't worry about not coating the bottom with the mixture for it will turnout better this way by having the sauce on top and the breast searing  on the bottom. This will give an even cooking all around the chicken with different textures.

Walt Disney Baked Turkey  Legs  -  Party Time


I remember  going to Walt Disney world for the first time and  I kept seeing  a lot of people  walking around  with this large  chicken leg, it had to  an ostrich leg for it was too big, I really never seen anything like it. At this time I did like to cook and was just getting started in culinary School , so  to me that was a strange and  weird thing they were eating.

Well  I managed to track it down to these little  tiny booths and the lineup was crazy.  So in line I went, grabbed one and to my surprise they were really  nice,  juicy, smoky and   tender .  Never at that time would I guess it was a turkey for their meat is mostly  dry and bland, but it was out of this world.

I grabbed  my leg and walked down the pathway  and munched  on it like untamed animal for  I was enjoying it too much, I ‘am now ashamed to say that I had about two a day and  every time I return to the park, I would  go straight  to the booth  and  grab one.

I really hope that you will enjoy my recipe here, for I have to say it comes very close to the ones selling in the Disney Theme Park . I have returned to the Park about  eight  times, boy ! that’s a lot of turkey legs.


Try them  “Mickey”   would be proud…..:)

Recipe.....

3  Lg. Turkey legs

Brine
 Water to cover legs
1/4 Cup or less - Salt
3 Tbsp - Sugar
1 Tbsp. - Hp, Worcester sauce or Margie.
Alternative - Add liquid smoke

1 Tbsp - Olive oil per leg
1 Cube - Veggie, chicken stock


Smoke 
1/2 Cup rice
1/2 Tbsp. - Sugar
1 Tbsp. - Cooking oil

Bake on a rack with aluminum foil on the bottom of the pan with 2 Tbsp of the smoke mixture and add more  to it during the baking to create more smoke.

Bake at 400 degrees for about 20 mins., and turn them around about half way through. Then bake at 200 degrees for anywhere from 45 mins to 1 hour, turning them around at least once.

Make sure that you mix the brine solution very well and have the  legs completely under the waterline. At this point you can add "liquid Smoke " to it if you prefer and that will give you a stronger smoke taste.









This mixture of rice will burn off and give you a smoke taste to the legs, not as good as a smoker but the taste is not far behind. I know some add wood chips to the bottom of the pan to produce the smoke, and I'am sure it's a good idea but I do not want any wood burning in my oven, I just do not trust the method.






So easy to eat and serve. Add a piece of foil to the bottom drum and off you go walking down the street with everyone looking at you and asking where did you get that from. The perfect portable food.









Well  I just could not wait for my Friends to come over for a get together. This turkey leg was just asking me for a bite and  "I could not resist". Anyways   I did not show it on the video but I had another three in the fridge  ready to go.

Blacken Chicken  -  Galinha Preta

Galinha Preta  or Blacken Chicken  just a awesome  smooth  delicate taste,  and talk about tender.  The extra  soya  just gives it a perfect  flavor and  a aroma that just fills your house.

I like this dish because you can make it in one pot and you can use any part of the chicken. So go out and see the specials  and make it your way.

I hope you enjoy making this as much as I enjoyed making the video below.

Recipe...

1 1/2 Lbs. -  Chicken thighs or any parts.

4 Tbsp. - Soya  sauce
3 Tbsp. - Cooking oil
2 Tbsp. - Vinegar
1/2 Tsp. - sugar
3 Gloves - Garlic
3 - Bay leaves
1 to 1/2 Cups - Water

Salt and peeper to taste

Remember to have the heat on high as possible to braise  the chicken with the skin down first to get the fat into the pan for that awesome flavour. Now if you want  you can remove the skin and that will make it a more of a low-fat meal. 











After braising keep the heat  down on medium low to slowly bring all those juices to the chicken and by  slow  cooking it will give a more tender meat that will melt in your mouth. This dish can also be baked in an oven proof dish on a hot oven for about 25 to mins. 










I know you and yours will enjoy this awesome dish. So easy and done really fast and easy all done in one pot. Please make extra because you will need it, because it will go fast.

This has to be one of my favourite type wings, I just love the spice and the taste of orange together.  Always make some extra for your Friends and Family will eat them all up and of course they will ask for more.

Enjoy eating them as much as I enjoyed making them, just mmmm, mmmm good..:)

Recipe....... 

1/2 Kilo Chicken Wings

2 Heaping Tbsp. -  Marmalade
1/4 Cup - Butter
2 or 3 Gloves - Garlic
1 Tsp. - Soya sauce
1 to 2  Tbsp. - Hot sauce
1/4 Cup - Vinegar
1 or 2 Dash - Maggie

Salt and pepper to taste.

Options;
1 to 2 Tsp. - Housin Sauce
1 Tbsp - Brown sugar, if using a lower grade Marmalade.

Garlic and Ginger chicken Wings.

You want garlic, you want ginger, you like wings, then this is the recipe for chicken wings...This will cure your taste bubs with flavour.. 

If it is a game on TV or a Family event, you can not gooooooo !!! wrong, its is awesome...

Go ahead  and try one or two. I know you will not stop at two or three...:)

Recipe..... 


1/2 Kilo - Chicken wings.
1 Cup - All purpose flour 
1/2 Tsp. - Salt 

Recipe  sauce is made for 1 Kilo.

1/4 Cup - Butter
4 to 6 cloves - Garlic
1 Tbsp. - Minced  ginger
1 Tbsp. - Soya sauce
2 Tbsp. - Hot sauce 
4 to 6 Tbsp - Vinegar
1/2 Cup - Water
1/4 to 1/2 Cups - Brown sugar

Salt and pepper to taste.


Baking Chicken wings;

  • Preheat oven to 400°. Set a wire rack inside each of 2 large rimmed baking sheets.  
  • Bake wings until cooked through and skin is crispy, 45–50 minutes.

Chicken Kebabs The European Way.


Chicken Kebab, so easy and have it your way in a pocket or on a plate. Anyway you see it, it is awesome...

I see all  the time here in Poland and in a lot of the European  Countries, and everyone seems to love them, all the way from the chicken or the beef.

I see that this custom recipe started from the Turkey Kitchen   the incorporation of this simple dish  is   what we see today as the fasted fast food, that has caught up with a tremendous growth.  I could not really call it a fast food, with it awesome spices, lettuce, tomatoes with a creamy garlic sauce, what can I say more about it.  The words now can only say   Mmmmm mmmmm Good.....:)

Recipe......

1/2 Kilo - Chicken breast  

1 Tbsp  - Kebab mix. or see below.
1/2 Cup - Butter milk
1/2 Tsp. - Chill powder
2 Tbsp. - Cooking oil
2 Cups - Chopped lettuce 
1 Sm. -  Tomato 

1/3 Cups - Green onions
1/2 Cups - Parsley
1 Tbsp. - Olive oil 
1 Tbsp. - Vinegar

Sauce 

2 Tbsp. - Mayo
3 Tbsp. - Buttermilk
1/2 to 1 Tsp. Garlic powder. 

Salt and pepper to all as per taste. 

Options 

- Sour cream
- Red peppers 
- Cheese
- Beef


Kebab mix from scratch.

1 teaspoon dried oregano
1/2 teaspoon  cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon Cayenne pepper
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Chicken Tacos, just out of this world, so light and good. The only problem that you would have here is that you did not make enough. Hit them with some heat and blow your taste buds away  .... :)

Corn Tortias
2 Tbsp. - Cooking  oil
1  Lbs - Chicken breasts.
1/2 Cup - Tomato sauce
1/2 Tbsp. - Garlic salt
1/2 Tbsp. - Chilli powder
2 Tbsp. - Taco Seasoning Mix
1/4 Cup -  Water

Toppings
Lettuce
Tomatoes
Any hard cheese
Sour cream
Vinegar

Salt and pepper to taste

Buttered Chicken - The Easy And Fast Way.


Buttered Chicken, call it from India or Pakistani either way it's out of this world. In the recipe I remove most of the prep work like many spices in the traditional way or using the spice grinder, all turned into "My Way", simple and super-fast, but oh !! so easy. The only problem you will have here is that you could run out if you do not make enough..:)

1- Chicken breast
1/2 to 1/3 Cup - Butter
1 Sm. - Onion
3 Cloves - Garlic
1/2 Cup -  Tomato sauce
1/2 to 1 Tsp. - Chili powder
1/2 Cup - Heavy cream
2 Tbsp. - Cooking oil
2 Tbsp. - Masala
1/4 Cup - Parsley
1/2 to 1 Tsp. - Cumin
1 to 2 Sticks - Cinnamon
Milk as needed.
Salt and pepper to taste

Chicken Enchiladas Sour Cream give it that flavor that enriches this dish. Please remember to make more for everyone will ask for more. This of course would go just great with some Mexican music in the background  and of course do not forget the hats or sombreros....:)

Recipe.....

1 1/2 to 2 Cups - Enchiladas sauce.
1/2 to 3/4 Cup -  Sour cream
1 Lbs. - Chicken breasts
2 Tbsp. - Cooking oil
1 Med. -  Onion
1 Med. -  Bell pepper
4  - Corn tortillas (8-inch).
1/2 to 1 Cup - Cheese (any hard cheese)
Salt and pepper to taste


Option;
 Enchiladas powder with milk
1 to 2 Tbsp. - Chopped red/green chilies

Keys-Style Citrus Chicken just like they make it in Florida. I travelled all the down to the Key's and stopped at a Awesome   waterfront  Diner and ordered this dish... Had to copy the recipe with it's tangy flavours and on top of  couscous you can not go wrong.

Recipe

3 -- large chicken breasts.
2  - Tbsp  oil.
2  to 3 gloves garlic.
1 to 2-  Tbsp  butter.
1 -- Tsp  lime rind.
½ -  Lime juice.
½ - Orange juice.
¼ - Tsp.  ginger powder or fresh.
1 -- Tsp Hot pepper (option).
Pepper to taste.
Salt -- dash (option).

Ritz Cracker Chicken À la  Carmo

This chicken recipe was given to me by my friend  Ms. Carmo in the USA, and I was surprised when I saw that Ritz Crackers were used, so I tried it.  I have to say that it turned out really awesome  and an outstanding  crunchy taste. You can be rest assured that I will repeat this with fish.
Anyways, I can write all day, try it and tell me your story.....

Recipe... 

2 lbs chicken tenders or 2 large chicken breasts
1 -  sleeves Ritz crackers
1/8 teaspoon pepper
1/2 cup whole milk
1 cups cheddar or any hard cheese, grated
1 teaspoon dried parsley

Sauce:
1 - 10 ounce can/package of any instant  cream soup mix.
1/2  cup  heavy cream or sour cream
2 tablespoon butter

Cover the pan with tin foil and bake at 400 degrees for 30 to 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

Now I like KFC and it's down right, but now my TFC is done at home and has the same taste and crunch... Just try it. Gooooo on, once and awhile it will not hurt you.

Now I know I know what you are saying that this is very fattening. Right on it is but if you have this within reason and once and awhile it really  not upset your diet.

Go ahead and try to eat just one " I dare you ". Do not underestimate this dish for it is really goos like the real thing.

Recipe 

TFC  My Way, Strips,  Wings.

2- Breasts
1 cup -- Cornflakes.
1 Tablespoon Salt
1 Teaspoon black pepper
1 Teaspoon garlic powder
1 Teaspoon paprika
½  Nutmeg.
½ to 1  Teaspoon dry thyme
1/2 Teaspoon dry rosemary
1/2 to 1 Teaspoon dry basil

Wash;
2 cups flour
1-2  eggs
½ to 1  cup buttermilk.
½ cup  water


Ingredients, The BIG Boys

11 herbs and spices as follows:

4-5 pieces of whole chicken , 2 -  breast leg, or 1 kilo wings.

1 Tablespoon Salt
1 Teaspoon black pepper
1 Teaspoon onion powder
1 Teaspoon garlic powder
1 Teaspoon paprika
1/2 Teaspoon dry thyme
1/2 Teaspoon dry oregano
1/2 Teaspoon dry rosemary
1/2 Teaspoon dry marjoram
1/2 Teaspoon dry sage
1/2 Teaspoon dry basil

Wash;
2 cups flour
1-2  eggs
½ to 1  cup buttermilk.
½ cup  water

Go ahead and cut your chicken breasts into strips. Do not worry if they are not all the same size or thickness for I have never seen a chicken breast that can be cut perfect. 

Also do not forget to dry them very well because I want all the mixture to stick to the chicken. In this way the results will be better. 







This is where you make it or break it in taste, this is the point where you add more or less of your favourite things. So if you want it like the BIG BOYS then this is the time. 

Or add some other things that will make it taste more like your homeland, there are a never ending choices to this. 







Get everything in close in order to make things easier to reach and move around as fast as possible and  to make your life a little more easy. 

Remember that you are working with raw chicken so be careful not to touch any other thing around you except your working items. 







It's the Cornflakes of golden corn that will give you the crunch crunch, it will look like this was made for this recipe. 

Do not grind the cornflakes to much for we do not want a fine flour,  but a texture that will deliver a crunch to your strips. 







Try to let the chicken strips dry for at least 10 minutes on the rack after the first procedure. This will help bond the mixture to the chicken better for a better texture when frying. 

The temperature has to be hot enough to lock down the mixture to the strips without falling a part. Also,  if it's too low then it will  soak up too much oil into the batter and make it very soggy.

Pate Recipe - Chicken.

If you like a chicken spread for just plain bread or on crackers for your guests, well "this is it". Easy to make and  if you find the taste of liver to strong, then just add mushrooms or more mushrooms until it becomes your own. Don't just take my word for it  "try it"...:)

Recipe

1 Kilo -- Chicken  liver.
2 -- Med.  Onions.
250 Grams -  mushrooms  ( for  milder taste).
2  to 3 -  Gloves  garlic.
1 to 2 teaspoons -  Paprika or hot sauce.
1 to 2  Tablespoons  - Olive oil.
1 to 2  Tablespoons  -  Light/heavy cream.
3 to 5 stacks -- Green onions.
Salt and pepper to taste.

Do you love KFC then you will go gaga over my TFC ( Tony Fried Chicken). I tried this recipe over and over again until I got it perfect. Now how does it work... Well by letting the first flour coating dry on a rack it lets the flour stiffen  up and then when you add the second coat,,,guess what !!  Crunch crunch, it becomes the same....Try it, do not take my word on it....:)

Recipe:

TFC  My Way
4-5 pieces of chicken, breast leg, thigh or 1 kilo wings.

1 Teaspoon Salt
1 Teaspoon black/white pepper
1 Teaspoon garlic powder
1 Teaspoon paprika
½  Nut meg.
½ to 1  Teaspoon dry thyme
1/2 Teaspoon dry rosemary
1/2 to 1 Teaspoon dry basil

Wash:
2 cups flour
1-2  eggs
½ to 1  cuo butter milk.
½ cup  water
Dash salt
