Roti Roti - Awesome

Now what could be better than a nice piece of  roti bread to go with your Indian dish’s or really any other one.  I like this  bread so much that sometimes I have it with just  jam or try adding some cheese to the top and put it under a grill  for about 30 seconds.

I ‘am sure that you will find this recipe so easy that you will be making it again and again.  Try it you will love the simplicity and  the simple taste that goes with everything.

Recipe....

1 Cup - All purpose flour
1/2 Cup - Water, as needed
1 Tsp. - Cooking oil
1/3 to 1/2 Tbsp. - Salt

Makes two servings of Roti.

Roti has to be one of the simplest bread recipes I know, just a few things from your Kitchen and your off.  Make extra for you will need it for it disappears fast.








In India and other places they use there hands to mix the  dough. Now I really believe that does a better job of mixing and I have to confess that I do use the method, but because of touching  my camera and   taking some scenes over again it  would cause problems with sticky dough on my hands. 







Don't  sweet, for you do not have to over work the dough, if fact too much kneading will give it a tougher texture. Just get  it to a point that it will not stick to your fingers nor your roller. 









First roll it into a ball and  press it with your fingers into a round flat disk. By using a roller or even a bottle will work-out just fine, also do not worry of it does not turn out perfectly round, it's all good.










Get a heavy fry pan and make sure the heat is up high, but keep an eye on it for it can burn really fast. In Indian they have a special  flat pan (called Tawa) the makes the perfect roti every time, but when you do not have then we use the next best thing.







I like to roll it around a open flame on a gas stove, but if yours is electric then it work also work. Now you will have to keep the heat setting down lower and move it around more because of the hot rings. Either way it will turn out great and everyone will love them.

Baked Tilapia - Budget Recipe



Baked  Tilapia -  Budget  Recipe

I hope you enjoy this baked tilapia  recipe.  Try it with other types of fish and it will be just as awesome. This fish  recipe is low in calories and just perfect  with a low side.  The side I made here in the picture is cuscus ,  I added just a  pinch of low salt  veggie stock to the water just to give it a nice flavor.

I know your Family and Friends will just love it.

Recipe....

1 to 1/2 Lbs. - Frozen tilapia  Frozen or fresh. 

3/4 Cups - Bread crumbs 
2 Tbsp. - Cooking oil
1 Tsp. - Oregano
1 Tsp. - Basil

Salt and pepper to taste. 

Options;
- Any other type of fish  
- Any other herbs
- Lemon juice topping

Frozen fish is the most economical budget minded fish that you can buy, because it can be stored for a long time and fresh fish has to be sold right away that's why it is at a low cost. Not that does not mean that you can not make this recipe with any other type of fish, go ahead be brave and just see what you can do to please your Family or friends.  






I like adding the seasoning to the fish in this way for it makes a lot less mess and you can easily wash the bag or toss it. Go ahead and shake and shake it will make you around if you add some music.. After all any exorcise is good.








Here at this stage I added a bit off cooking oil, but you can spray it with those oil spray cans or  just  rub butter to the dish, this is necessary to prevent the fish from sticking. 









If you want you can squeeze a bit of fresh lemon juice before that baking process or/and when it is baked.

Instant Noodle Soup --  Budget Recipe  

As I was going shopping for many years I was noticing  how many people were buying these  small soup cups and  noodles in a package.  I just had to buy one and try it for myself, for after all I found out that it was a  billion dollar seller around the world, so it had to be good, right?

Wrong, what I got was some pasta with a small package with a small amount of a powdery substance.  I followed the instructions on the package and had it all souped up and  I have to say that it was “awful” and the salt content  was around  800ml.  in sodium.  How could anyone like that !!  Was it because of the low price, conveyance of a very fast food  or the taste, after all  I must be wrong because they sell millions per  day worldwide.  So !!

So  I just cannot give up on this recipe for it’s just too popular.  I had a challenge so it was off  to the kitchen  and experiment,  experiment    until I got it right. My result was a fast “Instant Noodle Soup” that  is low in sodium,  done in 3 mins, really cheaper than their products  and really tastes good.


I really hope that you try this and please let me know how it turned out.

Recipe....

1 to 1/2 Cups -  Egg noodles
1/2 Tsp. - Low or no salt veggie stock


Options
Bean noodles.
Reg. Pasta noodles

1/2 Cube - Meat stock
1/2 Cube - Chicken stock

Make sure that you follow the products instruction on the cooking timings because depending on what type of pasta use can make a big different. 










I like my soup with just a little water so I drain the water to about 1/4 of an inch below the pasta line. Now if you like it more as a soup, then leave it with water to about  1/4 to 1/2 inch above the pasta line. Either way it will turn out good. 



Try it with other types of  stock from anywhere from chicken, meat, mushrooms and other types from around the world. It will be like a  "different experience"  every time. 



There is sooooo many types of  pasta around that you could be having a different one for every day of the month.

Green Onion Bread -- Chinese Style




Green Onion Bread --  Chinese Style


Green Onion Bread   Chinese  style, now what could be better than this simple fast  bead recipe.  I know it does not look like the bread that you are use to, but it is awesome, has flavor  and goes with about anything you can make up.

Try it on its own or as an  appetizer,  just cut them up into squares and add really any topping and there you go  “bang”  the cheers from your  Party.  The best  part is if you need more you can make it  real fast. Make some extra for the freeze really well,   just let them thaw for a few minute and toss them into the toaster  and  there you go.

Recipe....

1 Cup - All purpose flour.
3 to 5 Stems - Green onions
1/2 Tsp. - Caster sugar
1/2 Tsp. - Sesame seed oil
1 Tbsp. - Cooking oil
1/2 Tsp. - Salt
1/2 Cup - Water as needed.

Options;
1/2 Tbsp. -  Olive oil
3 Gloves - Minced garlic.

Remember to add a little water at a time for you want  the dough not to  stick to the sides of the bowl and  turn into a ball.  If you add too much  water then just  add some  more flour.









After you added the oil mixture to the  dough  then add as much as the green onions as you like. Go on try it also by a dding some minced garlic and really bring up the flavour.









Now at this point you should let the bread rest for about 15 to 20 minutes for the dough to rise just a bit, but it will not rise much because there is no yeast.  Also when you get them at this point you can freeze them and use them at a later date.








Keep an eye on the temperature it should be on med. high and there will be a little smoke. Before the first flip you should see a slight light browning half way up the side of the bread. Do not worry about flipping it over a few times for it will not hurt it, but do not press down on it.

Walt Disney Baked Turkey  Legs  -  Party Time


I remember  going to Walt Disney world for the first time and  I kept seeing  a lot of people  walking around  with this large  chicken leg, it had to  an ostrich leg for it was too big, I really never seen anything like it. At this time I did like to cook and was just getting started in culinary School , so  to me that was a strange and  weird thing they were eating.

Well  I managed to track it down to these little  tiny booths and the lineup was crazy.  So in line I went, grabbed one and to my surprise they were really  nice,  juicy, smoky and   tender .  Never at that time would I guess it was a turkey for their meat is mostly  dry and bland, but it was out of this world.

I grabbed  my leg and walked down the pathway  and munched  on it like untamed animal for  I was enjoying it too much, I ‘am now ashamed to say that I had about two a day and  every time I return to the park, I would  go straight  to the booth  and  grab one.

I really hope that you will enjoy my recipe here, for I have to say it comes very close to the ones selling in the Disney Theme Park . I have returned to the Park about  eight  times, boy ! that’s a lot of turkey legs.


Try them  “Mickey”   would be proud…..:)

Recipe.....

3  Lg. Turkey legs

Brine
 Water to cover legs
1/4 Cup or less - Salt
3 Tbsp - Sugar
1 Tbsp. - Hp, Worcester sauce or Margie.
Alternative - Add liquid smoke

1 Tbsp - Olive oil per leg
1 Cube - Veggie, chicken stock


Smoke 
1/2 Cup rice
1/2 Tbsp. - Sugar
1 Tbsp. - Cooking oil

Bake on a rack with aluminum foil on the bottom of the pan with 2 Tbsp of the smoke mixture and add more  to it during the baking to create more smoke.

Bake at 400 degrees for about 20 mins., and turn them around about half way through. Then bake at 200 degrees for anywhere from 45 mins to 1 hour, turning them around at least once.

Make sure that you mix the brine solution very well and have the  legs completely under the waterline. At this point you can add "liquid Smoke " to it if you prefer and that will give you a stronger smoke taste.









This mixture of rice will burn off and give you a smoke taste to the legs, not as good as a smoker but the taste is not far behind. I know some add wood chips to the bottom of the pan to produce the smoke, and I'am sure it's a good idea but I do not want any wood burning in my oven, I just do not trust the method.






So easy to eat and serve. Add a piece of foil to the bottom drum and off you go walking down the street with everyone looking at you and asking where did you get that from. The perfect portable food.









Well  I just could not wait for my Friends to come over for a get together. This turkey leg was just asking me for a bite and  "I could not resist". Anyways   I did not show it on the video but I had another three in the fridge  ready to go.

Rose  Pasta so Easy, so Fast and for the Budget  Minded, I  Know You Will  Enjoy  It…..:)

Sometimes you just want that simple fast meal without all the trouble and  to  find the simple  things that you have every day  in your fridge.  

With this recipe, you will find that even with this  simple  cooking  dish it will have a great taste and  a dish that everyone will love. Just do not tell anyone “how” you made it because they will think that you went to a lot of trouble to make it.

Recipe....

1/2 Pkg. of any type Pasta.
1 to 2 Tbsp. - Olive oil
1 to 2 Tsp. - Tomato paste
1/2 Cup - Sour cream plus 1/3 Tsp. salt
1 to 2 Tbsp. - Ketchup
1 Sm. - Onion
3/4 Tsp. Parsley
1/3 Cup - Milk

Salt and pepper to taste.
Add more milk as necessary.

Add about 1/3 Tsp. of salt to the sour cream in order not to just give the dish taste, but to help the cream to not curl when the ketchup is added. Also, buttermilk of 100% whole milk goes well with this pasta dish. 









If you find that the sauce is too thick after it is done or if it cooled off waiting for the pasta, then you can add more milk or the water from the pasta pot.  












I like to mix everything in a bowl but it will turn out just as awesome a dish if you just added it to the top.  








Try it with other types of pasta, my favourite is spaghetti but I did too many videos with it and I decided to use more of a variety.

Pizza Margrita - Party Time



Pizza Margrita - Party Time

This is just an awesome pizza that’s so simple to make and it looks great when you put it on the table, your friends  will love you for it.  I made the simple version and added just a few simple items to it, for I like the taste of the good grade olive oil and fresh basil to come through. Sometimes simplicity is the best.


Go ahead and add whatever you like and make it your way and please let me know how it turned out.

Recipe....

1 1/2  Cups - 550 All purpose  flour.

1 Tsp. - Active yeast
1 to 3 Tsp. - Olive oil (parts)
1/2 Cup - Water
1 Tsp. - Sugar
1/2 Tsp. - Salt

More water as needed.


Topping;
-  Tomato sauce
-  Mozzarella cheese
-  Fresh basil
- Parsley

Options;
- Sweet Peppers
- Sun dried tomatoes
- Onions



 Makes a 12 in. Pizza

By boiling your fresh tomato's for about five minutes it  will break down the fibers  and make it release most of it's juices from it. If you are using a metal strainer then use a utensil that will not be rubbing and scraping on metal to metal. 








There is really nothing better then making your own tomato sauce from fresh tomato's. Now at this point add anything you want to the sauce and make it your own.











Remember that we do not want the sauce to thick or watery. To thick then it will dry out, to thin and it will over wet the dough and make it it soggy. I usually add the sauce to about half an inch up to the edge so in this way I get a nice crunch on the pizza.








Awaaa !!! the Mozzarella cheese, I like it to be fresh and I cut it in about 1/4 inch pieces for in this way I get a different taste in every-bite, form the awesome crust, the sauce and the combination of them all. Now if you want you can still shred the cheese and add it more evenly all around.





Any way you cut it, it will always turn out awesome and your Family and friends will love you for it. Do not forget to make some extra for it will go really fast.

Spicy Bacon Deviled Eggs -   Party Time


Got that  Party coming  or Gathering with your Family and Friends, well  how about  a simple fast recipe of  something  spicy  that will make everyone praise you,  Deviled Eggs.

Where can you get something that cook’s up really fast and all you need is some boiled eggs  and sauce, put that together and “bang” your done,  now watch all the smiling faces that come with it.

The only problem you will have here is making enough for they will gobble it up,  always make extra for you will need it.

Recipe...

6 Eggs

1/3 Cup - Bacon bits
1/4 Cup - Mayo
1/2 Tsp. - Vinegar
1/2 Tsp. - Sugar 
1/2 to 1 Tsp. - Mustard  
1 Tbsp. - Pepper sauce or hot sauce. 
Paprika topping   

Options;
1/2 Tsp. - Chili powder

This mixture is really fast and easy to make. Try to not to make it to thick because as you keep it in the fridge it will harden up more and become very firm. 









Do not worry to much about the shape of the egg nor if it is not 100% perfect. Once it's put all together it will look awesome and they will disappear really fast.  









Add your favourite bacon from honey and maple  to ceder cured, any way you make  it will turn out good and everyone will love you.
