Perfect Picnic Pasta Salad Recipe


Want a perfect picnic salad, here it is. Easy to make and can be served anytime or anywhere. Perfect for the office lunch or even a snack. 


Ingredients


Vinaigrette Dressing 

3 tbsp.           -   Dijon mustard 

1/4 cup         -  Apple cider vinegar

1/4 cup         -  Rice vinegar

1 tsp.             -  White sugar 

3/4 tsp.         -  Salt, kosher 

1/2 tsp.         -  Cayenne pepper (option)

1/2 cup         -  Olive oil, added in parts.

2 tsp.             -  Fresh dill, chopped 

2 tsp.             -  Fresh parsley 

1 tsp.             -  Chives, chopped

1 tsp.             -  Fresh basil


Salad 

1/2 pkg.         -  Corkscrew pasta

1 cup              -  Snow peas

1 cup              -  Finely sliced carrots

1 cup              -  Broccoli florets, bite-size pieces

1 cup              -  Cherry tomatoes, sliced 

1/4 cup          -  Finely chopped red onions

1/2 cup          -  Sliced red bell pepper

Portuguese Chorizo Egg Casserole  One-Pot Recipe

When it comes to Portuguese cuisine, this one is one of my favorites. It starts with juicy sausage, chorizo that has all the full flavor that just comes out in this dish. The pork, paprika, garlic, and fully smoked sausage create a perfect fit for any combination. 



Recipe;


1 to 1 1/2 pounds of  chorizo


1/4 Cup - olive oil

1 Med. - Onion

1 to 2 cloves - Garlic

1/3 Cup - Red or white wine

3 Tbsp. - Tomato paste

1 Tbsp  - Hot sauce

2 - Bay leafs


2/3 Cups - Frozen peas

1 Med. - Carrot, sliced

1 Med. - Tomato, chopped 


Salt and pepper as needed 

3 - Eggs

This has to be my best  Buffalo Chicken Wings Recipe but this time instead of frying, I had them baked.  I always watch what I eat, but sometimes at least once a week I can enjoy whatever I want. So this week it is my wings. 


Ingredients 

Baked wings 
4 lbs.            -  Chicken wings, wingettes and drumettes. Tips (optional) 
2 tbsp.         -  Baking powder 
1 tsp.            -  Onion powder
1 tsp.            -  Sweet paprika 


Sauce 
4 tbsp.          -  Unsalted butter
1/4 cup         -  Piri Piri  or Frank’s Original  red hot sauce
1 tbsp.          -  Brown sugar 
2 tbsp.          -  Ketchup
Salt                -  As needed

Blue Cheese Dip 
1/4  cup        -  Blue cheese, soft part.
1/4  cup        -  Sour cream
2 tbsp.          -  Mayonnaise 
2 tbsp.          -  Lemon juice 
Splash           -  Milk 

Salt and pepper to taste 

Cooking times -  350 degrees for around 35 to 40 mins, flip wings once.

Ok, I hear you. I was asked to come up with a poached egg recipe, that would be easy and simple. This is one of the best ways to add eggs to your diet that is oil-free.

I know that they show you how to twirl the water into a spin, add vinegar and add the egg into the vortex. I find that this method in the video is the best and the easiest way to get it right the first time. Well, anyway you make it you know that poached eggs are always the best when you are counting calories.

I will have to call this the perfect wrap or sandwich. After all, everything is all held in a pocket that is easy to handle and eat.


Ingredients
Makes 4 wraps. 

Chicken
1 lb.              -  Boneless chicken breast cut into bite-size pieces
1 tsp.            -  Olive oil  
1/2 tsp.        -  Sweet paprika 
1/2 tsp.        -  Garlic powder 

Filling 
 4 lg.              -  Flour or corn tortillas
1/4 cup        -  Green onions
1 sm.            -  Sweet red onion 
1 med.          -  Tomato, sliced 
1/2 ned.       -  Cucumber, sliced 
2 cups          -  Ready-mix lettuce or other

Yogurt dressing  
2/3 cup        -   Plain yogurt 
1/3 sm.        -  Juice of a lemon
1 tsp.            -  Mustard
1 tbsp.          -  Olive oil 
1 tbsp.          -  Dried parsley
1/2 tbsp.      -  Hot chili powder (option)

Salt and pepper to taste

Ingredients 

1/2 pkg.           -   Bow-tie pasta or other
2 cups.             -   Broccoli, bite-sized pieces 
1/2 cup            -   cherry tomatoes, sliced 
2-3 tbsp.          -   Olive oil
2 tbsp.              -   Garlic, minced
1/2 cup            -   Sun-dried tomatoes
1/4 cup            -   Parsley, chopped 
1 -2 tbsp.         -   Parmesan cheese, grated
1/4 cup            -   Black or green olives, sliced

Salt and pepper to taste

Options -  Hot red pepper flakes, lemon juice, goat cheese, parmigiana cheese

I love this salad and I cannot get enough of it. It's the perfect lunch to take to work, it's is so Diversified for your immediate family or for a party. It can be used as a side dish or a main meal or even a topping for tortillas.


The serving of 1 cup is around 165 calories and 7 grams of fat. 


Ingredients 

1 can                -  Black beans, rinsed and drained
1/2 cup            -  Corn, rinsed and drained 
3/4 cup            -  Cherry tomatoes, sliced
1 med.             -  Avocado, chopped 
1 sm.                -  Red onion, finely chopped 
1/4 cup            -  Green onion, chopped
1/4 cup            -  Parsley, chopped
 

Dressing

1 tbsp.             -  Apply cider vinegar
1 tbsp.             -  Olive oil
1 sm.                -  Juice of lime or lemon 
1 tbsp.              -  Red hot peppers, chopped. (option)

Salt and pepper to taste.

Well, here it is, one of my favorite fish dishes. I love this dish for it is made really quickly and it always turns out perfect, really you can not do wrong. 


Fish high in calories? Calories. ... Most lean or lower fat species of fish, such as trout, cod, flounder, and sole, contain 100 calories or less per 3 ounce cooked portion. Fish skin good for you? Fish skin is a great source of nutrients that support human health, such as protein, omega-3 fatty acids, and vitamin E. Consuming fish skin can contribute to muscle growth, improved heart health, and healthy skin. 100 calories or less per 3 ounce cooked portion. Calories Cal. per half-fish serving without skin. 246cal. Fish skin per half-fish skin on. approx. 100cal.

Ingredients 1 to 2 whole fresh trout, descaled, gutted, and rinsed. Lemon - Sliced, as needed Almonds - Sliced, as needed Olive oil - As needed Pasley - As needed Salt and pepper as needed

Homemade fish spice 1/4 tsp. - Salt 1/4 tsp. - Pepper 1 tsp. - Dried dill 1 tsp. - Garlic powder 1/4 tsp. - Ground ginger

Options - Unsalted butter

Portuguese Style Sauteed Shrimp Recipe

Well, here is one of my favorites meals, sauteed shrimp. I like serving this to my family and friends and watch their faces glow as they dash to the serving table.


Is shrimp good for you, can you lose weight?
 
Shrimp is low in calories, carbs, and fat, but high in protein and essential micronutrients. It is also quite beneficial for your health and may promote better heart health.

   

Ingredients 

2 lbs.                  -  Shrimp, with or without a head,
                               deveined or not.

4 to 6 cloves      -  Crushed  garlic 
1 sm.                   -  Onion, finely chopped 
1/4 cup               -  White wine or beer    
1 tbsp.                -   Hot pepper, sliced  
1 Tbsp.               -   Tomato paste 
1 tsp.                  -   Piri Piri hot sauce 
1 tsp.                  -   Paprika, sweet  
2 tbsp.                -   Butter, unsalted 
1 tsp.                  -   Honey
2 tbsp.                -   Olive oil 
  
Lemon juice  to taste 
Salt and pepper to taste 

Toppings -  parsley,  lemon wedges


Tips:  
-  Do not overcook the shrimp, if you do, it will be hard and chewy.
-  Sauce can be strained or leave it as it is.
-  Leave the heads on during the cooking to give flavor to the sauce. 
-  If you want, remove the heads after you are finished cooking.

This has to be one of my most favorite recipes for lunch at my office.  It heats up really fast in the microwave and in seconds I have the perfect meal.  I have to say that I do not like to buy lunch for I tend to go to the fattier foods and that causes a problem for me.  So I would rather make my meal myself.


Apple cider vinegar
Apple cider vinegar has various healthful properties, including antimicrobial and antioxidant effects. What's more, evidence suggests it may offer health benefits, such as aiding weight loss, reducing cholesterol, lowering blood sugar levels.

Bell peppers
Bell peppers are rich in many vitamins and antioxidants, especially vitamin C and various carotenoids.


Serving - one cup, approximately  235 calories.

Ingredients 

2 cups            -  White or brown rice, cooled 
1 can             -  Tuna, chucky, partially drained
1/2 pkg.        -  Any mixed frozen veggies, cooked 
1/4 cup         -  Olives, green or black, sliced 
1/4 cup         -  Bell red pepper, chopped 
1/4 cup         -  Green onions    
2 tbsp.          -  Capers, drained 


Sauce 

1 tbsp.           -  Oil or water from tuna 
1 tbsp.           -  Apple cider vinegar
1 tbsp.           -  Olive oil  
1/2 sm.          -  Juice of a lemon 

Salt and pepper to taste
