Polish Potato Pancakes - Placki Kartoflane

I have to say that this is one of my favorite potatoes dishes from all the others.  Since I came to Poland I had a few of these and it seems that it’s the Countries  main  popular  main treat or dish. It’s served everywhere from the family home to the finer restaurants.

I find that it is really easy to make and so simple, but do not let it fool you, it’s has a taste all on its own and  is really  good and satisfying.  A great dish that this comes with. Is  just  make the pancake a little bigger and just add  some goulash and fold it over and then we are talking about an outstanding dish.

I can find this recipe on almost any restaurant in Poland from the simple small place to a five star. I also found that they  small places  here that just serve this and nothing else on the menu.

Recipe

2  Lbs. -  Farmer potatoes

1 - Egg
1 Med. - Onion
1 to 2 Clove - Garlic
1 to 2 - All purpose flour
1 Tbsp. - Dry veggie stock
1/2 to 1 - Black pepper

Salt to taste

Its important to remove most of the water but do not use a strainer or any other method to remove it. Like the video shows you, it will remove about 75% of the water  but will still leave enough to keep it moist. 

We want the outside to be crispy and stay moist and flavorful inside.





The heat has to be high enough to cook the potatoes, but if  the heat is to high it will burn the outside and the inside would be raw. The heat should not be higher them set to medium. 

Turn the pancake when the pancake is cooked halfway up and  give it a few more minutes. 

Make your potato large or as small as you want, after all its for you to enjoy. 





One way instead of using paper towels is to place the pancake on a rack in order for it to dry up. I find that when I make a lot that this method works better. 








If you want a real treat then just make it a little bigger and add some goulash  to the center of the pancake and just fold over. A great Polish treat that I know you will enjoy.

I have a real problem with this recipe because my Girlfriend does not stop to ask for these spicy potatoes as a side dish or just for a snack.  It’s the type of side dish that just goes with everything and you can not just stop at one.  Sometimes  “ I get that look “ at round  late in the evening, “ I  need a snack “ and then it’s off to the kitchen making these wedges. Really do I have a choice.

Of course they are just perfect for any Party as a side, and do not forget how good they go with a picnic or a BBQ,  aweeee just a great hit all the time. Do not take my word, just try them and you will see.

Recipe;

2 Lbs. -  Your favorite potatoes.

1/4 or 1/2 Tbsp. - Salt
1 to Tbsp. - Olive oil

Seasoning; 

1/2 Tsp. - Garlic salt
1/2 Tsp. - Paprika
1/2 to 3/4 Tsp. - Cayenne pepper
1 Tsp. - Dry parsley
1 Tbsp. - Olive oil

Salt and pepper to taste.

Options; 
Add 1/3 Tsp. - Ground cumin

Here was using a Farmers potatoes that is grown locally that is, for my the best tasting kind of potato. Of course it does take more work because of all the cleaning I have to do, but in the end your extra work will be rewarded. 







Ok "why" did I take off the skins for they are awesome with them on, well my Girlfriend does not like them so really what can I do. But  for me I like them on so I sometimes make a batch for her (smaller) and one for me (big large) hahha ...That will teach her, please do not tell her I wrote this...

Now do not forget to dry them after you washed them for it allows the oil to stick better and you get a more even bake all around. 





How much spice do you add, well how spicy do you want it to become ? Here I am having it as a medium spicy but you can have it the way you want, just add more or as much as you want. After all it's yours to enjoy.








It's important to add all your seasoning when the wedges are hot and make sure the your have stirred or tossed them well to get an even coverage on all the potatoes evenly.











Go ahead and try to eat just one, I dare you...No one can do it...:)

I just love the taste of fresh veggies, especially when it is raw and there is no cooking process going on.  When you eat any plant or root completely raw it has a  detoxifying on your system  and helps cleanup your digestive track and that’s all good.

I try to eat raw veggie at least twice a week, but to just pick up a carrot and munch on it is not my style. I like it to have some taste and a tasty tang to enjoy it, that’s why I always make a pesto to go with it, and boy !!  there you go an awesome late night dinner or snack. Go ahead make a few  and  try it for a couple of days and see if it does not change your well being.

I ‘am sure that once you go raw, you will keep it up to lose the weight or to just get something good for your heath.

Recipe; 

1/2 Lg. - Zucchini
1/2 Med. - Carrot
1/4 Med. - Cucumber
1/2 Med. - Any apple
2  Stems. - Green onion.
A few stems of parsley

Pesto;
1/2 Med. - Avocado
1/4 Cup - Sunflower seeds
1 Clove - Fresh garlic
1/3 Med. Juice of a lemon
1 Tsp. - Olive oil
1 Tsp. - Vinegar

Options; 
1 Whole juice of a lime
1/4 Cup - Walnuts
1/4 Cup - Pine nuts

Salt and pepper to taste.

Try and make sure that all the veggies are as fresh as possible for only in that way will you get that awesome taste of freshness. Try it with lime and go ahead and change the seed to about anything you like. 








I like to do almost all my  cutting/slicing  by hand for that's the way my Momma taught me. Now here to slice the zucchini I just used a very long and sharp knife, but you can use a slicing contraption if it will make your life a bit easier. 
  
Remember that practice makes perfect, so go ahead and try it by hand, you just might surprise yourself. 






Spread as much of the pesto as you want, but keep one side of the sliced zucchini clean in order to keep the end clean  when you roll it, so it will not spread out and make a mess. Also if you really do not want all the fuss with making the pesto, then try it with just mayo with a dash of lemon or lime, it will be all good. 









Now move the zucchini over the veggies and tuck it around the middle of the slice. If you find that the zucchini starts to crack then remember that its all good and don't worry, but on the next one try to get the slices more thin and this will prevent it from happening. 










Now wrap the other end with the clean part and flip it over and add the toothpick to hold it all together. Remember to keep it as tight as possible but not to have the pesto spread out.
If you find the the outer zucchini wrap is a little dry for you liking, then I would recommend you to brush light coating of olive oil on it and that will soften it up.  









There you go, your "Mother would be proud". Try it at your next gathering and see how happy your Friends and Family will be.

Sushi  The Simple Way - Easy And  Fast

I  see that everyone just loves  sushi, but when it comes to making it, I hear a lot of  “I cannot make it”, it looks to complicated. Well now,  there is no more reason not to try it, for in the video below  I show you how easy it is to make without all  the fuss and   you use just  things that you have around the house  or that is easy to find.

Go ahead  and try it, really what could go wrong, you could even surprise yourself. One thing I know is that your Family and Friends will just love you for it.

Recipe;

1 Cup - Sushi rice 
1/4 Cup - White vinegar 
1/2 Tsp. - Sugar 
1/2 Tsp. - Salt 

Smoked salmon
Avocado
Cucumber 
Mayo 
Sesame seeds. 

Options; 
Sweet pepper

Combine the vinegar, sugar, and salt and sprinkle it all around the rice while folding it. At this point you should be just flipping it, not stirring because the rice is very delicate at this stage and you do not want it to go mushy. 

If you want you can fan the rice in order to help the drying stage go faster, but for me I find that I can skip this process. Make sure that you allow the rice to dry off before you work with it. 




For this recipe I used  smoked salmon for it is easy and less complicated as the raw salmon. Also not everyone is into the raw thing, this makes things a little more easy. 










At first please do not make your Sushi complicated, just use your everyday things that you find around the house instead of hunting down all the other special  ingredients.   















Make sure that you knife is sharp, also to make it easier you should  be cleaning and wetting your knife on every few cuts. 

The size of the sushi  should bite size, but then everyone is different so adapt it to suit you and your Friends.

Aw !!  The classic  McDonald  fries, so good, so crispy  and  tender in the inside.  Now I know, I know that fries can be fattening and eating too much can give you some extra pounds where you do not want it.

Recipe;

Potatoes  best suitable for fries.

1/3 Cup sugar per  2 Lbs.

Salt and/or vinegar to taste.

Plenty of cooking oil.

Choose a potato that is most suitable for making fries, remember that not all potatoes will give you that crisp crunch.  Here I 'am  using what they call a "new potato" in  Canada. 

If you have a question on the potato that would be best, then ask your Supermarket Clerk to help you in finding the best one. Also look for the lager ones and with a few knots as possible.



Most potato cutters will not cut them this thin, so, try it by the old fashion way.

Go ahead and cut them by hand "Like My Momma Taught  Me", remember that "practice, makes perfect.



Make sure that you use plenty of water in order to make the potato process more effective. Please make sure that the fries are not wet before it goes into the hot oil, for it could  pop back at you.

Apple Cinnamon Loaf Cake

Now what can go better together then  apples and cinnamon, a great  combination.  I had some friends from my local Pub ask  me to bring them some cake  after  watching one of my videos, so off  to the kitchen I went.  Hi ho hi ho  off to work we go.

I  really like cake but I do not like all the work of  making it the regular  complicated  way, that’s way  I use a loaf  pan.  Just  mix   and bake,  if you want something on top then just added it to the top and there you go……..Done  fast and easy with no fuss.

Recipe....

1 1/2 Cups - all purpose flour
1/3 Cup - Brown sugar
2/3 Cup - White sugar
1/2 Cup - Butter
1 Lg. -  Apple
2 - Eggs
1 Tsp. - Cinnamon
1 3/4 Tsp. - Baking powder
1/2 Cup - Milk, more as necessary

Options
1/3  Cup - Almonds
1/3  Cup - Walnuts

Apple and cinnamon really goes good together and it gives off an awesome aroma  while you are baking it. Now at this point you can add some walnuts or almonds, whatever you want, make it your way.










At this point add only half of the mixture and half of the  apple and cinnamon. Do not press it down but allow it just to stay on the top.










Add the other half to the loaf pan and the half of the apple mix. We do not want to press or blend it in for we want it to bake on top for an awesome topping that all your friends will cry for.








Grab a toothpick and stab it around the middle of the loaf  and see if it is dry and if it is done. Just remember that the apples are still moist and it could give you some off readings. Now if it's been in the oven for the at least 50 mins., then it's probably done.

Instant Noodle Soup --  Budget Recipe  

As I was going shopping for many years I was noticing  how many people were buying these  small soup cups and  noodles in a package.  I just had to buy one and try it for myself, for after all I found out that it was a  billion dollar seller around the world, so it had to be good, right?

Wrong, what I got was some pasta with a small package with a small amount of a powdery substance.  I followed the instructions on the package and had it all souped up and  I have to say that it was “awful” and the salt content  was around  800ml.  in sodium.  How could anyone like that !!  Was it because of the low price, conveyance of a very fast food  or the taste, after all  I must be wrong because they sell millions per  day worldwide.  So !!

So  I just cannot give up on this recipe for it’s just too popular.  I had a challenge so it was off  to the kitchen  and experiment,  experiment    until I got it right. My result was a fast “Instant Noodle Soup” that  is low in sodium,  done in 3 mins, really cheaper than their products  and really tastes good.


I really hope that you try this and please let me know how it turned out.

Recipe....

1 to 1/2 Cups -  Egg noodles
1/2 Tsp. - Low or no salt veggie stock


Options
Bean noodles.
Reg. Pasta noodles

1/2 Cube - Meat stock
1/2 Cube - Chicken stock

Make sure that you follow the products instruction on the cooking timings because depending on what type of pasta use can make a big different. 










I like my soup with just a little water so I drain the water to about 1/4 of an inch below the pasta line. Now if you like it more as a soup, then leave it with water to about  1/4 to 1/2 inch above the pasta line. Either way it will turn out good. 



Try it with other types of  stock from anywhere from chicken, meat, mushrooms and other types from around the world. It will be like a  "different experience"  every time. 



There is sooooo many types of  pasta around that you could be having a different one for every day of the month.
