Spaghetti and Meatballs Recipe


Well here we go again with one of my favorite recipes, the awesome spaghetti with meatballs that is infused into a rich and creamy homemade tomato sauce.

I make and use a lot of minced meat and pork in my dishes because they come in many fat contents from the super lean to downright fatty. All this can be used to your liken as per taste and diet. As for me I like to use a medium ground beef for in this way I get the best of two world, light and  full of flavor.

Now do not let this simple recipe fool you for it is really out of the world. The meatballs just good great blended into the tomato sauce and just when you think that it is perfect, then add the parmesan and then talk to me.


I know you will just fall in love with this oldie but great recipe, please let me know how yours turned out or did you add anything extra.

Recipe;

1 Lbs. - Medium beef

1 Med. - Egg
1 to 2 Gloves - Garlic
1/2 Med. - Onion
1/2 Cup  - Bread crumbs
1 Tbsp. - Parmesan cheese
1 Tbsp. - Dry parsley
1/4 Tsp. - Pepper

Salt to taste.

Options;
1 Tsp. - Soya sauce or HP sauce.

For Baking;
Bake meatballs on lightly oiled tray with a hot oven at 350 F ( 170 C.) for  25 to 30 mins., Turning once.

I like to use a medium ground beef for it gives off a better flavor and becomes more moist. Now if you want it more lean or because you are on a diet then I would go all the up to lean beef. 










Make the onions are diced as small as possible so when you roll the meat into a ball nothing will be sticking out and coming out of the meat when you cook it. 











The mixture has to have a consistency that will hold the meat into a ball without it falling apart.  If you find it still a little to moist then add some more breadcrumbs.








Use a soup spoon for scooping up the meat mixture and  in this way you will get a perfect measurement for your Meatball. Of course to can also make them smaller by using a teaspoon, and way you do it it will be awesome. 









Make sure that you let the meatballs simmer in the tomato sauce for at least 20 mins. so the meat can be fully cooked in the inside and let the sauce incorporate into the meat.

Green Olive Pasta - Lazy Man Recipe

I have been making this green olive pasta for a very long time and it is always a crowd pleasure it is so easy to make that I debated if I wanted to make a video on it.  Something’s you may think that something so easy like this would not taste good because of its simple ingredients, but it turns out awesome every time I make it.

The green olives gives it that tartness to the dish while the smoothness of the olive oil comes through to give it an outstanding  pasta dish that your Friends and Family will love. Go ahead and try it with different types of olive or  even add  black olives if you would like it a bit more mild tasting. Don’t forget the parmesan cheese.

Recipe; 

1/2 Package of  Spaghetti or Penne Pasta

1/2 Cup - Green olives
1/4 Cup - Unsalted butter
1/2 Cup. - Med. onion
1/4 Cup - Olive oil
1 to 2 Cloves - Garlic 
1 1/2 Tsp.- Dry parsley or fresh 

Salt and pepper to taste. 

Alternatives/ Options;  
Black olives 
Green onions
Oregano 
Basil

Here I'am using about 1/2 of a medium onion and I diced it as small as possible, but you can keep it a bit larger if you like a crunch in your sauce.  

Also I l sauteed the onions in the butter for a few minutes  to bring out the sweetness in the sauce. If you want try it with green onions and see how that turns out for you. 






As for me green olives is the way to go because the tartness goes perfect with the smoothness of the olive oil, but if you want,try it with black olives or even you can go as far as adding capers or a combination of both. 

Hey, what can I say that this dish is so diversified that you can almost having a different variety for every day of the week. 





Remember to not over cook the olives for you want them hot enough to just release there oils into the sauce, but not to dry them out. When you add the them then I would not cook them longer then a minute or so. 

When adding salt, please keep in mind that the green olives have already salt in them and I would taste the sauce at this point before adding more salt. 





Add your olive oil only when you have finished the cooking process. For we do not want to cook the oil, just get it warmed up. By overheating the oil then it loses it's natural flavor and loses it's good properties that are good for you. The pan should be hot enough to heat it when you turn the heat off. 







I always recommend not to strain your pasta over running water for it loses it's starches that help make your sauce more think and flavorful. Use a pasta   ladle and let the pasta drain from it, in this way you will still get some starch on it and it will make your sauce more juicy and tasty.

Instant Noodle Soup -- Budget Recipe



Instant Noodle Soup --  Budget Recipe  

As I was going shopping for many years I was noticing  how many people were buying these  small soup cups and  noodles in a package.  I just had to buy one and try it for myself, for after all I found out that it was a  billion dollar seller around the world, so it had to be good, right?

Wrong, what I got was some pasta with a small package with a small amount of a powdery substance.  I followed the instructions on the package and had it all souped up and  I have to say that it was “awful” and the salt content  was around  800ml.  in sodium.  How could anyone like that !!  Was it because of the low price, conveyance of a very fast food  or the taste, after all  I must be wrong because they sell millions per  day worldwide.  So !!

So  I just cannot give up on this recipe for it’s just too popular.  I had a challenge so it was off  to the kitchen  and experiment,  experiment    until I got it right. My result was a fast “Instant Noodle Soup” that  is low in sodium,  done in 3 mins, really cheaper than their products  and really tastes good.

Recipe....

1 to 1/2 Cups -  Egg noodles
1/2 Tsp. - Low or no salt veggie stock


Options
Bean noodles.
Reg. Pasta noodles

1/2 Cube - Meat stock
1/2 Cube - Chicken stock

Make sure that you follow the products instruction on the cooking timings because depending on what type of pasta use can make a big different. 










I like my soup with just a little water so I drain the water to about 1/4 of an inch below the pasta line. Now if you like it more as a soup, then leave it with water to about  1/4 to 1/2 inch above the pasta line. Either way it will turn out good. 



Try it with other types of  stock from anywhere from chicken, meat, mushrooms and other types from around the world. It will be like a  "different experience"  every time. 



There is sooooo many types of  pasta around that you could be having a different one for every day of the month.

Rose  Pasta so Easy, so Fast and for the Budget  Minded, I  Know You Will  Enjoy  It…..:)

Sometimes you just want that simple fast meal without all the trouble and  to  find the simple  things that you have every day  in your fridge.  

With this recipe, you will find that even with this  simple  cooking  dish it will have a great taste and  a dish that everyone will love. Just do not tell anyone “how” you made it because they will think that you went to a lot of trouble to make it.

Recipe....

1/2 Pkg. of any type Pasta.
1 to 2 Tbsp. - Olive oil
1 to 2 Tsp. - Tomato paste
1/2 Cup - Sour cream plus 1/3 Tsp. salt
1 to 2 Tbsp. - Ketchup
1 Sm. - Onion
3/4 Tsp. Parsley
1/3 Cup - Milk

Salt and pepper to taste.
Add more milk as necessary.

Add about 1/3 Tsp. of salt to the sour cream in order not to just give the dish taste, but to help the cream to not curl when the ketchup is added. Also, buttermilk of 100% whole milk goes well with this pasta dish. 









If you find that the sauce is too thick after it is done or if it cooled off waiting for the pasta, then you can add more milk or the water from the pasta pot.  












I like to mix everything in a bowl but it will turn out just as awesome a dish if you just added it to the top.  








Try it with other types of pasta, my favourite is spaghetti but I did too many videos with it and I decided to use more of a variety.

This dish s absolutely awesome with its delicate pasta the seafood right down to a bit or hint of hot pepper spice. A great romantic dish for you and your loved one to enjoy…:)
Ok, Guy’s listen up, a Woman just loves a Man that can cook and if you want to impress, well this is the dish. Just practice it and then have her sit down in the Kitchen with you with some beautiful flowers. Open up a bottle of her favourite wine and pour out two glasses. As you glide gracefully at in the Kitchen and stir up your dish. With the smells and your cooking will make any Girl happy. Try it Guy’s you cannot go wrong with this dish. Also for the Ladies your Man will Love you for it, it is really a romantic dish. Awaaa !! all the loving, what could be better…

Recipe....

1 1/2 Lbs. -  Seafood assortment
3/4 Lb. - Pasta of choice

1 Sm. - Onion
3 Gloves - Garlic
2 Tbsp. - Butter
1 Tbsp. - Hot Sauce
1 Tbsp. - Tomato paste
1 Cup - Beer
1/2 Juice - Lemon
1/2 Tsp. - Thyme
1/2 Tsp. - Cumin
1/4 Cup - Parsley
1/3 to 1/2 Cup - Green onions

Salt and pepper to taste

Options;
1/2 Cup - White Wine

Keep the temperature on med./low to low so the sauce will simmer without overcooking, that will give you a very delicate smooth  taste. 











Try this recipe with just shrimp, calamari or mussels, this  sauce can be used for a vast variety of other seafood  types. Try it and see.

Salmon  Pasta In A Creamy Sauce

This recipe is out of this world, so creamy and taste, the cream cheese just gives it that smoothness and richness to eat.  Make a lot for your Family or love ones will ask for seconds.  

It is also a big hit with your guests for a home dinner or a party, it is always a great success. The only problem that I see with this recipe is that I always have to have some more at hand for it does go very quickly and I really do not want to run out.

Recipe;

1 to 2 Lbs. -  Salmon

1 Med. – Onion
1/2  Cup – Frozen peas.
3 to 5 Oz. -  Plain cream cheese
3 to 5 Oz. -  Sour cream or light cream
2 Tbsp. – Cooking oil
1 Tbsp. – Flour
1/2   - Lemon
1 – Bay leaf
1/2 Tsp. - Veggie stock 
3 to 5 – Whole allspice

Topping;
1/2  Cup -  Parsley

With is recipe, you really can use can, frozen or fresh salmon. Here I am using some fresh fish that I found on special at my local supermarket. 

Sometimes, you can also find some salmon end pieces that are not desirable for frying or baking, but would be perfect for this recipe. After all, you would get more bang for your buck with this savings. 








This is where the secret taste comes from. The slow boil with the fish and all the spices come together into a delightful taste when it is blended with the pasta. 










Make sure at this point that there is no bones in the fish. Here I discard the fish skins, but some like to leave them. It is really up to you.

Remember for this recipe you do not need a premium salmon cut for this to be awesome, you can go for the end pieces that would be at a very affordable price.  It would not make any different towards the presentation or taste. 







This is where the flavor is, so please do not toss this liquid out. If you find that there is some loose particles leftover from the simmering, then just strain it to remove them. 









Just cook it long enough for the ingredients to blend together and the sauce becomes thicker. Remember that the salmon is already pre-cooked at this stage and we do not want to overcook the fish. 

If you find that the sauce became too thick, then just add a little milk at a time until it becomes the way you want it.

Nutty Fettuccine

Hello !!  have you tried this awesome pasta dish,  No ? Well go on I know you will have two portions like me and it is low fat, just awesome, awesome......:)

Recipe

4 to 5 - Med  tomatoes.
1  teaspoon - Salt.
2  teaspoons  – Sugar.
½ to 1 teaspoon -  Pepper.
10 slices – Prosciutto
250 grams- Fettuccine Pasta.
2 bunches – Rocked  lettuce.
½  cup – Sunflower seeds ( large variety)  or any nuts. 

Dressing
½  cup – Olive oil.
¼ cup – Red wine vinegar.
2  tablespoons – Basil.
1 to 2  cloves – Garlic  (option).
¼ cup – Graded Parmesan cheese.
1 teaspoon – Sugar.

Recipe;

1 to 1 1/2  Lbs. -  Ground Med. Beef.
1 Lg. -  Pork sausage
1 Med. - Onion
1/2 - Sweet pepper
1 Lg. - Carrot
3 Tbsp. - Cooking oil  (Olive oil) 
3 Tbsp. - Butter
1 Tsp. - Sugar
1 to 2 Tsp. - Basil
1/2 to 1 Tsp. - Paprika
3/4 Qtr. - Water with 3 to 4  Tbsp. of  tomato past.  
Salt and Pepper to taste

Options;
1/2 Cup - Wine (any)
1 to 2 Tsp. - Oregano
2 to 3 Cloves - Garlic

Want more sauce add;
1 Cup - Diced tomato's, canned or fresh.
or
1 Cup - Tomato sauce.

Mushroom Sauce For Pasta

Mushroom Sauce for Pasta, Smooth  and Soooo Good, try it, so simply and fast. I betcha you will even surprise yourself how it will turn out. I really like the creamy delicate taste of the mushrooms in this recipe, a treat for your Friends or Family.

In this recipe I tried to show you how easy it is to make a real four star restaurant quality dish without all the fuss of a complicated recipe. What could be better than a one-pot dish that is made in less than five minutes and it turns out like this.

Go ahead..  If you like mushrooms and pasta then this is the dish for you. Please let me know how it turned out…

Recipe.......

 -  2 to 3 tablespoons butter
 -  1/2 cup chopped onion
 -  2 or 2 cloves garlic, minced
 -  4 ounces fresh mushrooms, diced.
 -  1/2 to one teaspoon dried basil (optional)
 -  1/4 teaspoon salt
 -  1/8 teaspoon ground black pepper
 -  1 tablespoon all-purpose flour
 -  1/2 cup cream
 -  1 cups milk, add as needed

Really you can use any type of mushrooms you like and in this way by using a variety of them then you dish will turn out different every time. So if you like mushrooms then go ahead and use the best one you like. Now here I was using button mushrooms, my favorite that gives  a very gently light taste to this dish.

Now, first when you wash them please try to not let them soak, for we do not want to get them absorb too much water.


As your mushroom starts to get hot  they will give up there water and this has to be removed. Let the cooking proceed take place until most of the water has reduced, say around 80%. For in this way you will get more of a mushroom taste then a soggy water taste, that would not be good and it could spoil your dish. 

Keep the temperature at medium  heat on your stove and please keep stirring slowly so you can have a even cooking all around.


After adding the flour and blending it in, let it cook for a few minutes until it becomes thicker. Remember to keep on stirring until all the flour has dissolved into the mixture. So we can say that we are making a "rue" at this time. 

OK, you added the flour and the cream, but "I want more sauce". So, add more flour and cream, but only a little at a time, for it can be tricky. The mixture will always thicken in about a minute and where you think it is still to liquid, it will thicken up and your sauce could turn into jelly. What I usually do is add more flour and cream, but I will use milk after adding the cream to get it to the right amount of sauce thickness I want. Now in this way, you will get more control over you sauce and it will turn out smooth and creamy. So scrape the bottom of your pan like the picture above and when you see the bottom of the pan with no sauce and the sauce slowly moving back to fill the hole, then it is ready.


I do not like to rinse out my pasta under water like some have said to do. I like to use a pasta spatula and remove the pasta right out of the water and into my pasta. Now in this way you perverse  the pasta starches with the water, this helps your sauce to be more rich and it enhances the taste.

Recipe.....

1/2 Pkg. - Any pasta

1 Lbs. - Soya cutlets
1 Med. - Carrots
1/2 Med. - Onions
1/2 Cup - Mushrooms
1/2 Med. - Sweet pepper
1 Stock - Celery
2 Gloves - Garlic
2 Cups - Tomato's  minced
2 x 2 Tbsp. - Cookking oil
1/2 Cube - Veggie stock
1 Tsp. - Sugar

1 Tbsp. - lea and Perrins or any  worcestershire sauce.
1 Tsp. - Thyme
1 Tsp. - Oregano

Options;
1/2 Cup - Wine
1/4 Cup - Parsley
Cheese topping
