Turkey  Mini Rolls  Recipe


Every time, I have a Party and I need to make some finger foods, these mini turkey rolls always are a hit and they go really fast. I know that they can be made with the whole breast that is formed into a larger roll then sliced into smaller serving pieces. Then why? do I do it, I find that these give my party a better choice and looks better on the plate, especially when there is a great sauce to go over it. The thing I find wrong with this recipe is that it goes too fast, so make a lot.  


It looks like a lot of work for this, but I can assure you that once the mixture is done and the breast pieces have been flattened, it really goes very fast. By using a larger baking pan you can make quite a lot at one time and that will make your life a bit easier.  Always have some extra, ready to go for you will need it.

Recipe;

2 - Turkey breasts

1/4 Cup - Sundried tomato's
1/4 Cup - Parsley
2 - Garlic cloves
1 Tbsp. - Olive oil,
1/4 Cup - Hot red pepper
1/2 to 1 Tsp.- Lemon zest

Add your favorite cheese

Extra olive oil as needed
Salt and pepper as per taste


Mushroom Sauce 

1/3 Cup - Heavy cream
1 Cup - Low salt mushroom stock
2 Tbsp. - White wine or I tbsp white vinegar 
1 Tsp. - Mustered
1 Tsp. - Flour 
1 Tbsp. - Water, more as needed.  

Combine all in the pan, stir over medium heat until it boils and thickens. Add milk or more flour to get it thinner or thicker.

Here I am using two turkey breasts that I have sliced. The ingredients that I show here is the amount of two breasts.  So that will give me about five to six portions depending on the size of the breasts. 


Turkey meat is usually  on the tough  and  hard side so,  in order  to make it  more tender,  I have them  pounded down as  flat as   possible.  Make sure you  cover  the  meat with  some film  so it does not splatter everywhere.


Go ahead and add more or less, make it your way. If you like spice then go for it and make it hot or super hot, whichever way you make it, it can not go wrong. 


Add some olive oil to the top so it will not dry up, for the turkey has an intendancy to do that. If you do not want to use the oil then just cover the pan with tin foil and remove it at the last 5 minutes of baking.

Classic Baked Beans - Thick and Creamy 

How can something so simple that is made in one pot be so delicious  and easy to make. I just love beans, really all kinds from the smallest to the big butter beans, I can eat them all day.

This recipe is more of the North America type with contains a very simple recipe that comes together  with the sweetness of the molasses and the sugar in a smooth rich sauce. If you want some cooked beans that are more of the Mediterranean  type then just look below and  see the video and I know you will enjoy it as much as this one.  Anyone you chose I can assure you that your Family and Friends will thank you for it and ask for more.

Recipe

3 Cans - Read Kidney Beans  Or Other

1/3 Cup - Bacon
1 Lg. -  Onion
1 Cup - Beer
3 Tbsp. - Sugar white or brown
1 Tbsp. - Maggie or Worcestershire sauce.
2 Tbsp. - Tomato paste
2 Tbsp. - Molasses
1 Tbsp. - Mustard

Here I was using what I call a "hearty Bacon" that I have to slice myself. I just like the bacon to be a little more chunky then the pre-cut flat kind. 


Now go ahead and add your favorite bacon from hickey to golden maple for it's up to you. Or just do not add any bacon and have it as a veggie dish, anyway you make it, it will be awesome.  






I like to use white sugar in almost everything that calls for a sweetener, but here,  it does not really matter because I added the Molasses so it does even out the taste. Now if you want just go ahead and add brown sugar or even honey if you want. 








Don't forget that if you are using the beans from the can to drain the water from it for we want a nice thick sauce not a watery one. Also please make sure that you use the thick bean syrup from the bottom, that's called rich flavor. 

If you want to use dry beans, then all the better. Just add water to the beans and let it soak overnight before using. 

Did you know that by adding some cumin that it will cut down that gassy feeling that some people gets after eating beans.





This is exactly what we want when it comes out of the oven as a finished dish. We want it to have a smooth rich creamy sauce with tender beans. 

If you find that your sauce is to watery then just give it little more time in the oven with the lid off. Please keep an eye on it and give it a stir now and then. Keep an eye on it,  it will become thick very fast and it could burn on the bottom.

Stuffed Peppers Hamburger Recipe


This recipe is from something that  your Grandmother would make and serve to their Family  with all the fixings that make it just a perfect compact meal. I like to make a nice fresh salad to go with it with some light tasting  oil like olive oil  with a sprinkle of some herbs. It really goes with really any kind of side dish for the  natural flavor of the stuffed peepers  really enhance the  taste buds.

Recipe; 

2 Med. - bell peppers any color
1/2 Lb. - Ground beef
1 Sm. - Onion
2 Cloves - Garlic
1 Cup - Cooked rice
1/4 Cup - Ketchup
1 Med.- Tomato
2 Tbsp. - Olive oil
1/2 to 1 Tsp. - Oregano
1/2 to 1 Tsp. - Paprika
1/2 Tsp. - Maggie or HP sauce

Salt and Pepper to taste. 


Options; 
- Chilli peppers or sauce to taste.
- Tomato sauce for bottom of dish

Usually you just cut out the tops and fill the pepper with your rice mixture and that is fine, but I find it is easier to handle on the plate when there are down lying down. It really does not matter for it will turn out just awesome every time. 









I like to use a medium ground beef for I like the extra taste because it has a pit more fat. Now if you are watching your weight then I would go towards a more leaner meat. 









In this recipe I added a fresh tomato and I did not drain it because I want the tomato juice to be incorporated into the rice for a more full flavour.  








It's always good to have some extra sauce to add to the peppers when you serve it. So a fast way to do it is to just add a bit of water and with ketchup. Now if you do not like this method, then you can add some tomato sauce and add whatever you would like to make it your way. 








Now I made two stuffed peppers here or 2 halves for it's only for my Girlfriend and I, but this size dish would five  upright  peppers or  6 halfs.

Hello, do you like homemade  sausages but without all the work, well here it is.  They are just perfect for Breakfast , Lunch or Dinner  and  always a great family Choose.  

The herbs  and  paprika gives it that  sausage taste, now if you want  more of a Farmers  sweet  taste then just add a little honey  to it and watch all the smiles as you  make them.  How about adding some chilly and really spice up your life.. Best of all this  recipe goes with any side dish..

I hope you enjoy them, as much as I enjoyed making them for you.

Recipe...

1 1/2  Lbs. – Minced  pork

2 Tbsp. – Instant oatmeal
1 Med – Onion
2 to 4 – Minced garlic
1 – Egg
1 Tsp. – Paprika
1/2  Tsp. – Thyme
1/2 Tsp. – Rosemary

Bread crumbs as necessary  


Salt and pepper to taste

Options
Chilly as per taste
Honey can be added
Parsley.

Alternative
Pre-fry the onions  and the garlic  slowly with  2 Tbsp. of cooking oil.
Bake - Bake at 350 degrees for 25-30 minutes until sausages are no longer pink in centre.

Make then really any size you want, but remember that because they have no casing on  they are very fragile and can break very easily. 











Remember  to keep an eye on the frying process because too hot and it will cook the outside but will be raw on the inside. The right timing will be between  6 to 8 mins.. Also try it BBQ or wrapped up in foil for camping, anywhere you can enjoy it.









So moist and tender in the centre and 100% delicious. Please make some extra because your Family will ask for more, or make extra and freeze them for another day.   









Perfect for a Morning Breakfast with sausages and eggs. Here I split them in half to heat them up more faster and at the last minute of frying I added a tsp. of honey and boy !!  was it awesome.

Cheese Burgers with vegetables is perfect for a Camping trip. Get everyone and including the kid's to pack and make their own. A lot of fun, easy and fast. Please be careful with the little ones around an open camp fire...

Recipe.....

1 Lbs. - Ground beef
1 Lbs. -  Any potatoes
1/2 to 1 Cup - Shredded any cheese
1 to 2 Tsp. -  Worcestershire or Maggie sauce
2 Med. -  Green onions
1 1/2 Cups -  Carrots
1 Cup -  Cherry tomatoes.
Salt and pepper to taste.

Options;
Hot sauce
Steak, taco sauce
Breadcrumbs for Meat
