This has to be one of my most favorite recipes for lunch at my office. It heats up really fast in the microwave and in seconds I have the perfect meal. I have to say that I do not like to buy lunch for I tend to go to the fattier foods and that causes a problem for me. So I would rather make my meal myself.
Apple cider vinegar

Wasabi Tuna Sushi Recipe
Do you like Sushi, do you like tuna.
This is my Western version of Tuna Sushi. It is easy and convenient because it uses can tuna. Go ahead and see how easy and good it is. Now, this is my Wife's favorite sushi recipe because she will not eat raw fish, so I really designed this for her.
When it comes to making sushi at home, almost everyone thinks that it is an impossible task. When it is one of the easiest things to make that can give you so much satisfaction and everyone will praise you for it. Ingredients
Makes 4 rolls;
1 - Can of chunky Tuna (albacore or same) in oil or in water.
1 Pkg. of Nori
1 Cup - Pre-ready Sushi rice
1 to 2 Tbsp. - Mayo, low-fat
1 to 2 squirts - Lemon juice, or halve of an sm. lemon
1 to Tsp. - Wasabi
Salt to taste
1/2 Sweet red pepper, sliced thin
Few stems of green onions
Options - Smoked salmon, parsley leaves, avocado
Homemade Sushi rice
1 Cup - Sushi rice
1/4 Cup - White vinegar
1/2 Tsp. - Sugar
1/2 Tsp. - Salt
1) Make the sushi rice as per instructions on the package.
2) Mix the vinegar, sugar, and salt together.
3) Add the rice after it is done to a large bowl or pan.
4) Slowly add a bit at a time of the mixture to the rice while folding (not stirring) the rice over until the rice has absolved everything.
5) Spread the rice all around and let dry, fanning it will help it go faster.
Best Baked Rice And Beans
Well, here it is, my favorite dish that I just love to take to work for my lunch. Now, this is Spanish-style baked rice and beans. When the rice sucks up the salsa and with the beans, all that incredibly delicious combination makes this one outstanding recipe.
Now I have to tell you that my wife was mad at me because I did not iron the kitchen towel, so forgive me if you noticed. I have to say that I am very multi-talented but ironing I have no idea how to do it. Well, maybe next time I will try it.

Ingredients
2 cups - Basmati rice or other long-grain rice
2 cans - Red kidney beans, rinsed and drained
1 tsp. - Kosher salt or to taste
1 tsp. - Grounded black pepper or to taste
2 tsp. - Cumin, powdered
1/2 tsp. - Chilli powder
1/4 cup - Olive oil
1 jar - Tomato salsa (16 ounces)
2 1/2 cups - Chicken broth
2 tbsp - Chopped parsley
Notes
- Cover the dish very tightly with aluminum foil and put an oven tray on top of the dish to add more pressure for the cooking process. Cooking time - 1 hour and 10 mins at 350 F.
- When the cooking is done, check the tenderness of the rice and if need be, add some water and return the dish to the oven until the rice is tender.

Here you can add just about anything you would like to this tuna.
Try to toss the fish instead of a stir, so the fish can be flaky and not mashed.
As for the rice, you can prepare your own or get the pre-made sushi rice that you just bring to a boil and it is ready.
Remember to leave the nori open on the top part so it will stick together on the roll when rolling it. The bottom part does not matter.
Start by rolling the nori over the fish and veggies,
If you like a hot and spicy dish that is fast to make and is easy with no fuss, then here it is. I just love this dish for everything here just blends in so well that you will enjoy it over and over again. The spice is just perfect with the chicken with the smoothness of the rice.

1 Lb. - Chicken breast
2 Tbsp. - Cornstarch
Sauce:
2 Tbsp. or more - Sriracha sauce or see Homemade below
1/2 Cup - Water
1/4 Cup - Brown sugar
3 Tbsp. - Soya sauce
2 Tbsp. - Honey
1 Clove - Garlic
1 Tbsp. - Cornstarch
Salt and pepper to taste
Option:
1 Teaspoon - Hot red pepper flakes
2 Tbsp. or more - Any hot sauce Homemade Sriracha Sauce:
1 Tbsp. - Powdered chill
2 Cloves - Minced garlic or powdered
3 Tbsp. - Ketchup
1/4 Cup - Butter
2 Tbsp. - Brown sugar
1 Tsp. - Kosher salt
1/2 Cup - Water
1/4 Cup - Vinegar
Fresh grinded red jalapeno peppers can be used, about 2 to 3 larger (seeded) for this amount.
Melt the butter with the garlic and then add the other items. Let it come to a boil for about 3 minutes. Refrigerate overnight or for a few hours.

To get the best tasting chicken, get the natural Farmers (free range) or as organic as possible.
Here the portion is for about two Persons, but you can double it for more servings.
This recipe calls for a Sriracha sauce that you can get about anywhere. Now if you can not find any, please use any hot sauce or you can make a homemade version like I have added to the above recipe.
One way to add cornstarch or flour when the mixture is hot. Is to add it to a small strainer and just tape it slowly into the mixture and keep on stirring. In this way, it will blend in perfectly and it will not form any lumps.
This will give also give you more control over how thick you want it.
I do not really brown the chicken too much
because I want the sauce to penetrate into the meat more. I find that in this way, I get a more flavorful taste, more juicy and moist chicken.
When everything is together, let it simmer for about 2 to 3 minutes on low for the sauce to bond better to the meat.
If you make extra, then you can freeze it. for it does that well.
I see that
everyone just loves sushi, but when it
comes to making it, I hear a lot of “I
cannot make it”, it looks to complicated. Well now, there is no more reason not to try it, for in
the video below I show you how easy it
is to make without all the fuss and you
use just things that you have around the
house or that is easy to find.
Go ahead
and try it, really what could go wrong, you could even surprise
yourself. One thing I know is that your Family and Friends will just love you
for it.
Combine the vinegar, sugar, and salt and sprinkle it all around the rice while folding it. At this point you should be just flipping it, not stirring because the rice is very delicate at this stage and you do not want it to go mushy.
If you want you can fan the rice in order to help the drying stage go faster, but for me I find that I can skip this process. Make sure that you allow the rice to dry off before you work with it.
For this recipe I used smoked salmon for it is easy and less complicated as the raw salmon. Also not everyone is into the raw thing, this makes things a little more easy.
At first please do not make your Sushi complicated, just use your everyday things that you find around the house instead of hunting down all the other special ingredients.
Make sure that you knife is sharp, also to make it easier you should be cleaning and wetting your knife on every few cuts.
The size of the sushi should bite size, but then everyone is different so adapt it to suit you and your Friends.
I came home from having 3 beers , I was a bit tired form the Party and was
really hungry, but too lazy to cook. So
by just looking around here and there in
my Kitchen, an idea came to me. With
this the “Lazy Man’s Stir-fry” was born.
What a great and super fast recipe when you need something in a hurry and you have no idea
what you want. With a stir-fry all you
need is to find anything in your cupboards or fridge form veggies
to leftover meats and you have a meal.
I find with the stir-fry it all goes well with really any kind of herbs, spices and sauces all in one fry-pan, all goes in,
add corn starch or flour with water and
presto, sauce. Now keep looking in your cupboards for any type of rice or pasta, it all goes well. Now you do have the option to fry the rice and pasta with a little oil in the pan
and add then add your stir-fry to it,
but I like it just the way it is.

Can you use Chopstick, I do but after awhile my fingers get tired and then I have to switch over to a fork. Someday I guess I will have to practise it more and see if I can get to the point where I can pick-up a single piece of rice.
I like my Stir-fry with a lot of fresh herbs and for me it has to have a good dose of hot sauce, now that's just awesome.

Polish kielbasa with dirty rice.
Polish sausage or Kielbasa as it is call with what I call Dirty Rice. The rice has been infused with the natural juices of the sausage for the flavor to come through. Serve it with my Cold slaw recipe on the side to cool down the spice.
