Creamy Italian Sausage Pasta Recipe

Here we go again with a pasta dish or can we call it a salad dish. Whatever you want to call it, you know it will be an excellent recipe. 
Here, I did not slice the sausage, for instead, I break it down into pieces so it can blend better into the sauce and the pasta.



Ingredients 1 1/2 lbs - Italian sausage, skin removed 2 tbsp. - Olive oil 1 tbsp. - Oregano dried 1 tbsp. - Garlic, mashed 1/2 cup - White wine 1/2 cup - Red onion, finely chopped 1 cup - Green peas 1 cup - Cherry tomatoes 1 1/2 cup - Mushrooms, sliced 3/4 cup - Heavy cream 1/2 cup - Parmesan cheese, grated Milk as needed Salt and pepper as needed For more information, please see the video below;

First, I am sorry for my wife's phone recording in front of my video.  my wife and I did not notice this until I started editing this video. She is now recording small bits of my cooking to put on her future Tic-tok account. Anyways, I thought it was cute to see her trying to make her own film. 



Ingredients 6 to 8 pieces Drumsticks, skin on and bone-in 1 lg. - Onion, sliced or wedged 2 to 6 - Garlic cloves, minced or chopped 2 lg. - Carrots, peeled and sliced 3 each - Celery stalks, chopped 3 tbsp. - All-purpose flour 1/2 cup - White wine, extra for a splash 2 cups - Water 2 tbsp. - Tomato paste 1 tbsp. - Thyme, dried 2 tsp. - Worcestershire sauce 2 each - Bay leaf 1.5 lbs. - Potatoes, chopped into bite-size pieces Parsley as needed Salt and pepper to taste
Chicken cube (option)
Oven timings Pre-heated oven set at 350 degrees for 45 mins, with pan wrapped with alum foil. Second, heat at same for 40 mins, pan wrapped with added potatoes. For more information, please see the video below;

Here, once again is a great lunch or picnic salad. I enjoy making these recipes because after all, I have to eat my work, so I like to take my dishes to my office for a great snack or lunch. 



Ingredients 

Dressing 
1/4 cup         -  White wine or apple cider vinegar 
1/4 cup         -  Olive oil
1 tbsp.           -   Dijon mustard 
1 tbsp.           -  Garlic, minced
1 tsp.             -  Honey, (natural)

Salt and pepper to taste 

Salad 
1 cup            -  Red kidney beans 
1 cup            -  Green beans (cooked)
1/2 cup        -  Black beans 
1/2 cup        -  Chickpeas
1/3 cup        -  Finely chopped red onions
1/4 cup        -  Green onions
1/4 cup        -  Parsley, chopped

Note
-  Rinse and drain all canned beans.

Want a perfect picnic salad, here it is. Easy to make and can be served anytime or anywhere. Perfect for the office lunch or even a snack. 


Ingredients


Vinaigrette Dressing 

3 tbsp.           -   Dijon mustard 

1/4 cup         -  Apple cider vinegar

1/4 cup         -  Rice vinegar

1 tsp.             -  White sugar 

3/4 tsp.         -  Salt, kosher 

1/2 tsp.         -  Cayenne pepper (option)

1/2 cup         -  Olive oil, added in parts.

2 tsp.             -  Fresh dill, chopped 

2 tsp.             -  Fresh parsley 

1 tsp.             -  Chives, chopped

1 tsp.             -  Fresh basil


Salad 

1/2 pkg.         -  Corkscrew pasta

1 cup              -  Snow peas

1 cup              -  Finely sliced carrots

1 cup              -  Broccoli florets, bite-size pieces

1 cup              -  Cherry tomatoes, sliced 

1/4 cup          -  Finely chopped red onions

1/2 cup          -  Sliced red bell pepper

Portuguese Chorizo Egg Casserole  One-Pot Recipe

When it comes to Portuguese cuisine, this one is one of my favorites. It starts with juicy sausage, chorizo that has all the full flavor that just comes out in this dish. The pork, paprika, garlic, and fully smoked sausage create a perfect fit for any combination. 



Recipe;


1 to 1 1/2 pounds of  chorizo


1/4 Cup - olive oil

1 Med. - Onion

1 to 2 cloves - Garlic

1/3 Cup - Red or white wine

3 Tbsp. - Tomato paste

1 Tbsp  - Hot sauce

2 - Bay leafs


2/3 Cups - Frozen peas

1 Med. - Carrot, sliced

1 Med. - Tomato, chopped 


Salt and pepper as needed 

3 - Eggs

This has to be my best  Buffalo Chicken Wings Recipe but this time instead of frying, I had them baked.  I always watch what I eat, but sometimes at least once a week I can enjoy whatever I want. So this week it is my wings. 


Ingredients 

Baked wings 
4 lbs.            -  Chicken wings, wingettes and drumettes. Tips (optional) 
2 tbsp.         -  Baking powder 
1 tsp.            -  Onion powder
1 tsp.            -  Sweet paprika 


Sauce 
4 tbsp.          -  Unsalted butter
1/4 cup         -  Piri Piri  or Frank’s Original  red hot sauce
1 tbsp.          -  Brown sugar 
2 tbsp.          -  Ketchup
Salt                -  As needed

Blue Cheese Dip 
1/4  cup        -  Blue cheese, soft part.
1/4  cup        -  Sour cream
2 tbsp.          -  Mayonnaise 
2 tbsp.          -  Lemon juice 
Splash           -  Milk 

Salt and pepper to taste 

Cooking times -  350 degrees for around 35 to 40 mins, flip wings once.

Ok, I hear you. I was asked to come up with a poached egg recipe, that would be easy and simple. This is one of the best ways to add eggs to your diet that is oil-free.

I know that they show you how to twirl the water into a spin, add vinegar and add the egg into the vortex. I find that this method in the video is the best and the easiest way to get it right the first time. Well, anyway you make it you know that poached eggs are always the best when you are counting calories.

I will have to call this the perfect wrap or sandwich. After all, everything is all held in a pocket that is easy to handle and eat.


Ingredients
Makes 4 wraps. 

Chicken
1 lb.              -  Boneless chicken breast cut into bite-size pieces
1 tsp.            -  Olive oil  
1/2 tsp.        -  Sweet paprika 
1/2 tsp.        -  Garlic powder 

Filling 
 4 lg.              -  Flour or corn tortillas
1/4 cup        -  Green onions
1 sm.            -  Sweet red onion 
1 med.          -  Tomato, sliced 
1/2 ned.       -  Cucumber, sliced 
2 cups          -  Ready-mix lettuce or other

Yogurt dressing  
2/3 cup        -   Plain yogurt 
1/3 sm.        -  Juice of a lemon
1 tsp.            -  Mustard
1 tbsp.          -  Olive oil 
1 tbsp.          -  Dried parsley
1/2 tbsp.      -  Hot chili powder (option)

Salt and pepper to taste

Ingredients 

1/2 pkg.           -   Bow-tie pasta or other
2 cups.             -   Broccoli, bite-sized pieces 
1/2 cup            -   cherry tomatoes, sliced 
2-3 tbsp.          -   Olive oil
2 tbsp.              -   Garlic, minced
1/2 cup            -   Sun-dried tomatoes
1/4 cup            -   Parsley, chopped 
1 -2 tbsp.         -   Parmesan cheese, grated
1/4 cup            -   Black or green olives, sliced

Salt and pepper to taste

Options -  Hot red pepper flakes, lemon juice, goat cheese, parmigiana cheese

Southwestern Black Bean Skinny Salad

I love this salad and I cannot get enough of it. It's the perfect lunch to take to work, it's is so Diversified for your immediate family or for a party. It can be used as a side dish or a main meal or even a topping for tortillas.


The serving of 1 cup is around 165 calories and 7 grams of fat. 


Ingredients 

1 can                -  Black beans, rinsed and drained
1/2 cup            -  Corn, rinsed and drained 
3/4 cup            -  Cherry tomatoes, sliced
1 med.             -  Avocado, chopped 
1 sm.                -  Red onion, finely chopped 
1/4 cup            -  Green onion, chopped
1/4 cup            -  Parsley, chopped
 

Dressing

1 tbsp.             -  Apply cider vinegar
1 tbsp.             -  Olive oil
1 sm.                -  Juice of lime or lemon 
1 tbsp.              -  Red hot peppers, chopped. (option)

Salt and pepper to taste.
